I’ve never met a meatball I didn’t like, except for meatballs that are complicated to make.
You know the kind.
They either have tons of ingredients or need tons of time to put together.
These easy chicken meatballs with stuffing mix are neither of those things!
They only need 4 ingredients that you likely have in your fridge and pantry already and take only a few minutes to prep.
Plus they are moist and perfectly seasoned each time!
What’s better than that?
Ingredients
To make these you’ll need:
- Ground chicken– I don’t recommend using just ground white meat as it will be on the dryer side. Go for the variety that is 92 percent lean instead.
- Stuffing mix– A 6 ounce box of chicken flavored Stove Top stuffing
- Broth– Chicken broth
- Egg– To bind it all together
How to Make
These chicken meatballs with stuffing mix are pretty much the easiest chicken meatballs you could make and very similar to my easy baked meatballs.
To make them, just add all the ingredients to a large mixing bowl and mix it together with your hands or a sturdy spoon until everything is evenly incorporated.
Then scoop enough meatball mix into your hands so it will form a 1.5 inch ball when you roll it into meatball shape.
Put the meatball onto a baking sheet lined with parchment paper.
Repeat until you’ve used all the mixture.
Bake in a preheated 375 degree oven for 20 minutes.
Serve warm and enjoy!
Serving Suggestions
We like to serve these over mashed potatoes with gravy over top.
You can also serve them with noodle or rice with chicken gravy.
And for an Italian twist, you could heat up your favorite sauce and serve them with spaghetti or even in a chicken meatball sub.
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat them in the microwave until warmed through.
Can I freeze chicken meatballs?
Absolutely!
These chicken meatballs with stuffing mix freeze beautifully!
To freeze them, make them as directed above and let them cool completely.
Then place the cooled meatballs into ziplocking freezer safe bags.
Freeze for up to 3 months.
Defrost them in the fridge and heat them in the microwave, on the stove, or in the oven when you’re ready to enjoy.
Tips and Tricks
- You can substitute beef or vegetable broth for the chicken broth if that’s what you have on hand.
- This recipe would also work with ground turkey. Again make sure you aren’t using all white meat.
- Double this recipe to freeze a batch!

Instructions
