Cinnamon Roll Poke Cake

Cinnamon roll poke cake turns a box of cake mix into an extra special treat. This easy dessert recipe will impress anyone you serve it too with its sweet cinnamon flavor.

Ingredients

For The Cake

  • 1 box white cake mix + ingredients needed to prepare (on box)

For The Filling

  • 1/2 cup melted butter
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 cup sweetened condensed milk

For The Frosting

  • 8 ounces cream cheese softened
  • 1/4 cup butter (1/2 a stick), softened
  • 2 1/2 cups powdered sugar
  • 1/2 tsp vanilla extract
  • 1 tbsp sweetened condensed milk

Instructions

To Make The Cake

  • Add the cake mix and all of the ingredients called for in the package directions to a large mixing bowl. Whip together using a hand mixer, just until smooth & evenly combined.
  • Transfer the cake batter to a lightly grease 9x13" baking dish, making sure to spread it out in an even layer.
  • Bake the cake according to the package directions. Then remove, and let the cake cool significantly.
  • Once the cake has cooled, use the handle of a wooden spoon to poke holes evenly out all over it.

To Make The Filling

  • Add all of the filling ingredients to a mixing bowl, and whip together using a hand mixer until evenly incorporated and smooth.
  • Pour the filling mixture evenly out over the cake. Using a spatula, spread it out evenly to completely cover the cake & fill the holes.
  • Set the cake aside to finish cooling completely.

To Make The Frosting

  • To another mixing bowl, add the softened cream cheese & butter. Cream them together with a hand mixer until evenly combined and smooth.
  • Add the powdered sugar, extract, and condensed milk to the cream cheese mixture. Whip together, slowly at first, until all the ingredients are evenly incorporated and the frosting's light & fluffy.
  • Spread the cream cheese frosting evenly out over the top of the cake.
  • Chill for 30 minutes - 1 hour, then slice, serve & enjoy!

Notes

  • The cake can be served immediately without chilling, but chilling does allow the filling to set up in the holes and for the frosting to sink down into them as well.
  • You can substitute french vanilla cake mix or plain yellow cake mix instead of white cake. Both turned out great, and my kids say the yellow cake gives it more of a honey bun taste.
  • If you want more of a cinnamon taste, finish the cake off by sprinkling the frosting with cinnamon sugar dust- talking to you cinnamon lovers!
