Instant Pie Apple Pie Filling

Instant Pot apple pie filling is the quickest, no fuss way to make the delicious fall treat. While you can use the end result in pie, it's also delicious with ice cream or spooned out over pancakes or waffles.

Ingredients

  • 8 large apples peeled & diced (roughly 6-8 cups)
  • 1 tbsp lemon juice
  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 3/4 cups water
  • 1/4 cup cornstarch

Instructions

  • Make sure the liner is in your Instant Pot, then add the prepped apples to the bowl. Add the lemon juice and toss to coat.
  • In a medium mixing bowl whisk together the sugars, cinnamon, salt, and water until evenly combined. Pour this mixture over the apples and toss to combine.
  • Add the lid to the pot, turning to close. Set the vent valve to the sealed position.
  • Pressure cook for 1 minute at normal (medium) pressure. Let the mixture naturally release for 4 minutes, then carefully open the vent valve to release the rest of the pent up steam.
  • Open the lid, and remove 1/4 cup of the juices (it's ok if an apple or two is in there). Add the juices and cornstarch to a small mixing bowl and whisk together until smooth.
  • Pour the cornstarch mixture back into the pot, and stir just until thickened- trying not to break the apples up too much as you do.

Notes

  • Do not finely dice or chop the apples too small! You will still end up with delicious apple pie filling, but it won't have any chunks of apples in it and be more like a sauce.
  • If you prefer larger chunks, slice or just roughly chop your apples.
  • This recipe makes about 2 pints worth of apple pie filling.
