- 2 boxes stovetop stuffing
- 1 lb ground sausage
- 3/4 cup yellow onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 1 1/2 cups chicken broth
- 1 1/2 cups hot water
- 1 tbsp butter
- 1/2 tsp poultry seasoning
- 1/4 tsp dried thyme
- pinch garlic powder
- 2 eggs beaten
Sauté the sausage in a large skillet over medium heat, breaking it up as it cooks, until it's cooked through. Using a slotted spoon, transfer the cooked sausage to a large mixing bowl.
Add the stuffing, broth, and hot water to the mixing bowl with the meat. Stir together until evenly combined.
Ad the butter to the skillet with sausage drippings, melt. Add the veggies to the skillet, and sauté them until softened, stirring occasionally- about 5 minutes.
Transfer the softened veggies to the mixing bowl, along with the seasonings and beaten eggs. Stir everything together quickly until evenly combined.
Spray a 2 quart baking dish with nonstick cooking spray, then spread the stuffing mixture evenly out into the dish.
Cover the dish tightly with aluminum foil and bake at 350° for 20 minutes. Uncover and bake another 5-10 minutes.
Serve warm & enjoy.
- You can use any flavor of Stove Top stuffing you like.
- Use a low sodium option if salt's a concern.
- Quality ground sausage is a must! I recommend buying some from your butcher. If using store bought, I typically buy Jimmy Dean brand.
- Want to save on prep time? Buy already chopped veggies in your produce section. They may even have a prepared mirepoix blend, which is just a mixture of chopped onion, celery, and carrots and works perfectly in this dish.
