Ingredients

  • 2 boxes stovetop stuffing
  • 1 lb ground sausage
  • 3/4 cup yellow onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1 1/2 cups chicken broth
  • 1 1/2 cups hot water
  • 1 tbsp butter
  • 1/2 tsp poultry seasoning
  • 1/4 tsp dried thyme
  • pinch garlic powder
  • 2 eggs beaten

Instructions

  • Sauté the sausage in a large skillet over medium heat, breaking it up as it cooks, until it's cooked through. Using a slotted spoon, transfer the cooked sausage to a large mixing bowl.
  • Add the stuffing, broth, and hot water to the mixing bowl with the meat. Stir together until evenly combined.
  • Ad the butter to the skillet with sausage drippings, melt. Add the veggies to the skillet, and sauté them until softened, stirring occasionally- about 5 minutes.
  • Transfer the softened veggies to the mixing bowl, along with the seasonings and beaten eggs. Stir everything together quickly until evenly combined.
  • Spray a 2 quart baking dish with nonstick cooking spray, then spread the stuffing mixture evenly out into the dish.
  • Cover the dish tightly with aluminum foil and bake at 350° for 20 minutes. Uncover and bake another 5-10 minutes.
  • Serve warm & enjoy.

Notes

  • You can use any flavor of Stove Top stuffing you like.
  • Use a low sodium option if salt's a concern.
  • Quality ground sausage is a must! I recommend buying some from your butcher. If using store bought, I typically buy Jimmy Dean brand.
  • Want to save on prep time? Buy already chopped veggies in your produce section. They may even have a prepared mirepoix blend, which is just a mixture of chopped onion, celery, and carrots and works perfectly in this dish.
