- 16-24 ounces full fat ricotta cheese
- 2 tbsp extra virgin olive oil
Using A Food Processor
Add the ricotta cheese & oil to the bowl of a food processor fitted with the blade attachment.
Whip until smooth & creamy, about 1-2 minutes.
Using An Immersion Blender
Add the ricotta cheese & oil to a mixing bowl.
Using an immersion blender, mix on high speed until smooth & creamy.
Scrape down the sides, and repeat if necessary.
To Serve
Spread the whipped cheese spread evenly out in a shallow bowl or platter.
Garnish, as desired, (you can also leave it plain) and serve it with crusty baguette slices & enjoy!
