Thanksgiving Meatloaf

Thanksgiving meatloaf gives you all the flavors of a traditional turkey dinner with a fraction of the work! This turkey loaf is perfect for Friendsgiving, a unique dish on the holidays, or anytime you want to enjoy the flavors of Thanksgiving without the hours of prep time!

Ingredients

  • 2 lbs ground turkey
  • 2 cups blend of diced onion, celery, and carrots
  • 1 box savory herb stuffing mix
  • 2 tsp dried sage
  • 1 tsp dried thyme
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp paprika
  • 2 large eggs
  • 1/3 cup milk
  • 1/3 cup brown gravy
  • salt & pepper to taste
  • 1/2 cup chicken broth
  • 1/2 cup cranberry sauce warmed

Instructions

  • Add all of the ingredients, EXCEPT the broth and cranberry sauce, to a large mixing bowl.
  • Mix together using clean hands, or a sturdy wooden spoon, until evenly combined.
  • Spray a casserole dish with nonstick cooking spray.
  • Add the meatloaf mixture to the prepared baking dish, and shape it into a rough log.
  • Pour the broth into the bottom of the dish.
  • Bake the loaf at 350° for 30 minutes.
  • Spread the warmed cranberry sauce evenly out overtop of the thanksgiving meatloaf.
  • Bake for another 45 minutes.
  • Carefully remove the dish from the oven, and set is aside. Let the meatloaf rest for at least 5 minutes, but up to 10 minutes.
  • Slice with a sharp knife, serve, & enjoy!

Notes

  • While the kind of milk isn't super important, if you can use whole milk to keep the meatloaf moist and tender.
  • Save yourself some prep time and buy pre chopped mirepoix from the produce section in the grocery store.
  • Don't skip letting the meatloaf rest! Resting it keeps more of the juices inside.
