- 3-4 large chicken breasts about 2 1/2 poinds
- salt & pepper
- 2 16 oz jars alfredo sauce
- 10-12 oz bag fresh broccoli florets
- 1 lb penne pasta
- 1 tsp garlic powder
- parmesan cheese for serving
Trim the chicken breasts of any excess fat, then season them with salt and pepper on both sides. Add them to the bowl of the slow cooker.
Pour the alfredo sauce out over the chicken, then add the broccoli to the slow cooker in an even layer.
Sprinkle the seasonings evenly out over top.
Cover and cook on low for 6 hours.
About 20 minutes before the chicken is done, cook the pasta according to the package instructions for 'al dente'.
Once the chicken's done, carefully transfer it to a cutting board using tongs- roughly shred or chop it. Transfer the chicken back to the slow cooker.
Add the cooked & drained pasta to the bowl of the slow cooker. Stir just until everything's evenly combined- too much and you'll pulverize the broccoli.
Spoon into bowls or onto plates to serve. Top with Parmesan cheese, if using, and enjoy!
- Don't stir the pasta into the crock pot too vigorously. You will crush the broccoli.
- Don't have penne? You could use fettucine or any other thicker pasta.
- You could add more veggies into this mix with some sliced mushrooms.
