- 1 lb chicken tenderloins cut into 1" pieces
- 1 tbsp extra virgin olive oil
- 4-5 cups fresh broccoli florets steamed
- 1 12 oz bag baby carrots steamed
- 2 10.5 oz cans condensed cream of mushroom soup
- 1/4-1/3 cup heavy cream
- 1 tsp onion powder
- 1/2 tsp garlic powder
- freshly cracked black pepper
- salt if needed, to taste
- pinch smoked paprika
- 1/4 cup chicken broth
- 8 oz mini farfalle pasta
Cook the pasta according to the package directions in salted water.
While the pasta cooks, add the oil to a large skillet set over medium high heat. Once the oil's hot add the chicken to the skillet and cook, stirring often, until white on all sides.
Add the soups, cream, and seasonings. Stir together until everything's evenly incorporated.
Reduce the heat to medium low and let the mixture simmer for 5 minutes. Stir often.
Stir in the broth to thin the sauce.
Drain the pasta and return it to the pot. Add the vegetables to the pot, and stir just until evenly incorporated.
Pour the cream sauce into the pot, stirring until everything's well coated.
Serve warm, topped with shredded Parmesan- if desired.
- You could spice this up a little with some minced or crushed garlic and red pepper flakes.
- Want it cheesier? Stir in Parmesan cheese right into the sauce.
- You could also make this with shrimp or omit the chicken totally.
