Crispy Baked Cornflake Chicken

This crispy cornflake chicken is a savory spin on my Grandma's classic dish. Moist, tender chicken breasts are baked in a crunchy seasoned cereal coating and ready in under 30 minutes. It's an easy dinner that even the pickiest easters will love!

Ingredients

  • 1 1/2 lbs boneless skinless chicken breasts trimmed of fat
  • 3 cups cornflake cereal
  • 1 1/2 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 2 large eggs beaten
  • 1/2 stick butter melted

Instructions

  • Add the cornflakes to a large ziplocking bag (gallon size). Using a rolling pin crush them. Add the seasonings to the bag, seal to close, and give it a shake to evenly mix them together. Set aside.
  • Add both eggs to a small mixing bowl and whisk them together until evenly combined. Set aside.
  • Using paper towels, pat all of the chicken dry. Working with one chicken breast at a time, dunk a breast in the egg bowl turning to coat.
  • Hold it over the bowl and let excess egg drip off for a second, then transfer it into the seasoned cornflake mixture. Turn the chicken to evenly coat, and press in the cornflakes as necessary.
  • Transfer the coated chicken to a non stick baking sheet. Repeat until all the chicken's been coated.
  • Spoon the butter evenly out over the cornflake chicken breasts.
  • Bake the chicken at 400° for 25-30 minutes.
  • Serve warm & enjoy!

Notes

  • If you're worried about the meat being cooked through the chicken is done when a meat thermometer reads 165F
  • You can use chicken tenderloin instead of breasts (makes yummy tenders), but adjust the cook time to only 15-20 minutes since they will cook more quickly.
