Crockpot Honey Parmesan Pork Loin

Ingredients

  • 4 lb pork loin
  • 2/3 cup shredded pecorino roman cheese
  • 1/2 cup honey
  • 3.5 tbsp soy sauce
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 2 tbsp minced garlic
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp salt
  • 2 tbsp cornstarch
  • 1/4 cup chicken broth

Instructions

  • Place the roast in the bowl of the crockpot. Set aside.
  • In a small mixing bowl add the cheese, honey, soy sauce, spices, garlic, oil, and salt. Whisk together until evenly combined.
  • Pour the sauce evenly out over the pork.
  • Cover & cook on low for 6-7 hours on LOW, or HIGH for 4-5 hours.
  • Carefully transfer the cooked pork roast to a cutting board.
  • Slice the pork and serve!

Notes

  • Make sure to save the drippings from the roast if you want to make gravy.
  • For juicy meat, be sure to let it rest for a few minutes prior to slicing.
  • You can use a bigger roast if desired, but you may need to cook it for longer. Pork is done when it reaches an internal temperature of 145.
