- 4 overly ripe bananas
- 1 standard size box yellow cake mix
- 2 large eggs
- 1 cup mini chocolate chips optional
Add the peeled bananas to a medium sized mixing bowl. Using a fork, mash them well.
Add the remaining two ingredients, and stir together until completely incorporated. If using the chocolate chips, fold them in.
Generously spray a 9x5" metal loaf pan with non stick cooking spray. Scrape the batter out of the mixing bowl and into the prepared loaf pan.
Lift the pan 1-2 inches off the counter, and drop. Repeat two times. This will remove any trapped air bubbles.
Bake at 350° for 45-50 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
Once done, remove the banana bread from the oven. Let it cool for 5-10 minutes. Run a butterknife around the edges to release the bread from the pan. Let it continue cooling.
Slice and serve the banana bread. It can be served warm or completely cooled.
- Like nuts in your banana bread? You can add some nuts to the batter or just sprinkle some on top of the batter before baking.
- For a chocolate version, swap chocolate cake mix out for the yellow.
- You could also use a spice cake mix- that's what we do at holidays and it's ALWAYS a hit!
