Quick & Easy Lasagna Soup (Slow Cooker Recipe)
Quick and easy lasagna soup is a lazy shortcut version of the soup you know and love. Made right in your slow cooker, this soup is a life saver on busy days that your whole family will love!

- 1 party size tray Stouffer's lasagna with meat sauce
- 8 cups chicken broth
- 1 tsp dried oregano
- 1/4 tsp dried basil
- 1/2 tsp garlic powder
- shredded mozzarella for serving
- ricotta cheese for serving
Remove the lasagna from the freezer, and let it thaw slightly- until mostly still frozen, but no longer rock hard. Using a sharp knife, carefully cut it into roughly 1-1 1/2" chunks.
Add all of the lasagna chunks to the bowl of your slow cooker. Pour the broth into the slow cooker, and add the seasonings.
Cover and cook on HIGH for 3-4 hours, or LOW for 6-7 hours- just until soupy, soft, and evenly combined & hot throughout.
Ladle into bowls and serve warm with your favorite toppings. We use shredded mozzarella and a dollop of creamy ricotta cheese.
- If the broth doesn't completely cover the lasagna pieces when added to the slow cooker, it's OK!
- You can add more broth if you want the consistency a bit thinner, but wait until the soup is warmed through before you do so you can see what the consistency is.
- While this is written for a meat lasagna, you could make a similar meal with their cheese lasagna or even their vegetable lasagna.
- If you use the vegetable lasagna and want this to stay vegetarian, sub vegetable stock for chicken broth.
