Cheesy Chicken Broccoli & Rice Foil Packets

Cheesy chicken broccoli and rice foil packets are a delicious meal that's perfect for meal prepping! Not only does it make meal prep easy but clean up will be a breeze making these a recipe you'll want to keep in your back pocket for any busy night.

Ingredients

  • 2-3 chicken breasts roughly 1 1/2 - 2 lbs, diced
  • 1 1/2 tsp seasoned salt
  • 1/4 tsp black pepper
  • 1/4 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 3 cups cooked & cooled white rice preferably either basmati or jasmine
  • 4 cups fresh broccoli florets
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup chopped, crisp cooked bacon

Instructions

  • Add the seasonings and chicken to a mixing bowl. Toss until the chicken's coated.
  • Lay six 12x12" pieces of foil out on a clean counter top. Equally divide the rice in between them, placing a scoop in the center of each.
  • Divide the chicken among the foil, adding it directly on top of the rice, followed by the broccoli.
  • Spread the mixture out just a bit so it's somewhat flatter, but still centered. Top with cheese, followed by the bacon.
  • Lift up the sides of the foil until they all meet in the center, and roll (or fold) to close- but leave a tiny hold open in the center for steam to escape. Repeat until all foil packets are closed, then transfer them to a large rimmed baking sheet.
  • Bake at 375° for 25 minutes.
  • Remove the baking sheet from the oven, and let it rest undisturbed for a full 10 minutes. Open the packets, but be careful to avoid the hot steam that escapes.
  • Serve & enjoy!

Notes

  • You can sub cauliflower rice for regular rice to cut carbs
  • This is a great way to use up leftover cooked rice!
  • Leftovers can be reheated for a few minutes in either the oven or the microwave
  • You can be air fry these too! Just cook 1-2 packets at a time at 370 degrees for 8-10 minutes.
