Cheesy Cilantro & Sour Cream Rice
Cheesy cilantro and sour cream rice is a delicious take on Mexican rice. Say hello to your new favorite taco night side dish!

- 3 cups cooked white rice
- 1 cup sour cream
- 1 4 oz can diced green chiles drained
- 2 cups Mexican blend cheese
- 1 15 oz can corn drained
- 1/3 cup chopped cilantro leaves
- 1/4 tsp ground cumin
- salt & pepper to taste
Add all of the ingredients to a large mixing bowl, except for half of the shredded cheese. Stir together until completely combined.
Lightly spray an 8x8 baking dish with nonstick cooking spray, then transfer the rice mixture to it. Spread out in an even layer.
Sprinkle the remaining cheese evenly out overtop of the rice mixture.
Bake at 350° for 25-30 minutes, until hot and bubbly and the cheese is melted.
Serve warm & enjoy!
- This recipe can be doubled to feed a crowd! Just bake it in a 9x13" baking dish instead.
