Cheesy Cilantro & Sour Cream Rice

Cheesy cilantro and sour cream rice is a delicious take on Mexican rice. Say hello to your new favorite taco night side dish!

Ingredients

  • 3 cups cooked white rice
  • 1 cup sour cream
  • 1 4 oz can diced green chiles drained
  • 2 cups Mexican blend cheese
  • 1 15 oz can corn drained
  • 1/3 cup chopped cilantro leaves
  • 1/4 tsp ground cumin
  • salt & pepper to taste

Instructions

  • Add all of the ingredients to a large mixing bowl, except for half of the shredded cheese. Stir together until completely combined.
  • Lightly spray an 8x8 baking dish with nonstick cooking spray, then transfer the rice mixture to it. Spread out in an even layer.
  • Sprinkle the remaining cheese evenly out overtop of the rice mixture.
  • Bake at 350° for 25-30 minutes, until hot and bubbly and the cheese is melted.
  • Serve warm & enjoy!

Notes

  • This recipe can be doubled to feed a crowd! Just bake it in a 9x13" baking dish instead.
  • Want to turn this into a meal? Add a pound of cooked ground beef, shredded rotisserie chicken, or even a can of drained black beans.
  • Don't want to fuss with cooking rice before making this? Buy the microwaveable bags of rice and just microwave it before you make this and you're good to go!
