Cucumber Tea Sandwiches

Cucumber tea sandwiches are a dish that proves that tasty elegance can be easy! These pretty sandwiches are literally the perfect party food for baby and bridal showers, brunch parties, tea parties, or even as appetizers before a holiday dinner!

Ingredients

  • 12 slices plain white bread
  • 1 English cucumber thinly sliced
  • 8 ounces cream cheese
  • 1/4 cup mayonnaise
  • 2 tbsp finely chopped fresh dill
  • 1 tbsp lemon juice fresh or bottled
  • 1/4 tsp garlic powder
  • salt & pepper to taste

Instructions

  • Cut the crusts off all the bread. Set aside.
  • To a mixing bowl add the cream cheese, mayo, and all seasonings except the salt & pepper. Using a hand mixer, blend them all together until evenly combined. Set aside.
  • Using a vegetable peeler, peel most of the skin on the cucumber- but leave a couple of strips on. If preferred, you can peel completely. Thinly slice the cucumber.
  • Spread the inside half of each slice of bread evenly with the cream cheese mixture. Then top the bottom halves evenly with the sliced cucumber. Season with salt & pepper.
  • Add the tops to close the sandwiches. Cut each of the six sandwiches into four even triangles.
  • Serve & enjoy!

Notes

  • Make sure to  use a sharp knife to cut the sandwiches so they don't tear. If they tear, they will still taste great, the presentation just won't be as pretty.
  • You can use a mandolin to more easily thinly slice the cucumbers. You want the slices to be uniform and roughly 1/8" wide.
  • It is important to use English cucumbers for this recipe. Other varieties contain more water and can lead to soggy sandwiches.
  • Prefer less chunky vegetables? Grate the cucumbers, squeeze them between layers of paper towels to remove excess moisture, and then mix them in with the rest of the cream cheese mixture.
