Blueberry Croissant Pastry Bake

Blueberry croissant bake is a deliciously sweet breakfast casserole that feels so special. Buttery croissants are dotted with juicy berries and bake in a rich cheesecake like custard for a pastry like taste on french toast you'll love!

Ingredients

  • 5 1/2 cups roughly chopped croissants
  • 1 cup fresh blueberries
  • 1 8 oz bar cream cheese softened
  • 2/3 cup white sugar
  • 2 large eggs
  • 1 tsp lemon juice
  • 1 tsp vanilla extract
  • 1 cup powdered milk
  • powdered sugar for garnish

Instructions

  • Liberally spray the 9x9 dish with non stick spray.
  • Spread the chopped croissant pieces in the prepared dish. Spread them out in an even layer. Sprinkle the blueberries evenly out overtop.
  • Add the sugar and cream cheese to a mixing bowl. Using a hand mixer, blend together until smooth and evenly combined.
  • Add the eggs, lemon juice, and extract- mixing together again until the mixture's smooth & creamy.
  • Add the milk in slowly, continuing to whip the mixture, until it's all evenly incorporated. Pour this evenly over the dish. Cover and let the dish sit for 30 minutes.
  • Bake at 350° for 35-40 minutes- until the mixture's set and the top's golden brown and crusty.
  • Carefully remove the hot pastry bake from the oven and let it rest for 5-10 minutes. Sprinkle with powdered sugar, if desired.
  • Cut into slices, serve, and enjoy!

Notes

  • Make sure you let the croissants sit in the custard prior to baking. If you skip this, parts of the croissants will be sort of dry.
  • You can substitute other berries for the blueberries. Both sliced strawberries and raspberries would be good in this.
  • Not a morning person? Make it the night before to let the dish soak overnight. Then just pop it in the oven in the morning.
