For The Salad
- 5 oz mixed greens chopped
- 2 romaine hearts chopped
- 1 1/2 cups corn chips
- 1 1/2 cups chopped matchstick carrots
- 1/2 red onion peeled & diced
- 1/2 cup fiesta blend shredded cheese
- 1 ripe avocado peeled, pit removed, and diced
- 6 slices bacon cooked crisp & crumbled
- 1 - 1 1/2 cups cold, leftover smoked pulled pork
For The Dressing
- 1 cup ranch dressing
- 1/2 cup sweet & savory barbecue sauce
Add all of the salad ingredients to a large mixing bowl. Toss until evenly combined.
In a separate mixing bowl, whisk together the ranch and barbecue until evenly combined.
Pour the barbecue ranch dressing over the salad mixture, then gently toss until evenly combined.
Serve immediately, and enjoy!
- Don't like or have pulled pork? You could also use pulled barbecue chicken.
- This salad is easy to customize. Not a fan of avocado? Don't use. Love corn? Add it in! You get the idea.
- While I recommend a sweet and savory barbecue sauce like a brown sugar bourbon variety or honey barbecue, you could use a spicy one if you prefer. Whatever you like!
