Barbecue ranch chopped salad is full of big textures and flavors.  Tangy barbecue ranch dressing smothers smoked pulled pork on a bed of crisp greens tossed with crunchy chips, zesty onion, creamy avocado, and more of your favorite toppings.

Ingredients

For The Salad

  • 5 oz mixed greens chopped
  • 2 romaine hearts chopped
  • 1 1/2 cups corn chips
  • 1 1/2 cups chopped matchstick carrots
  • 1/2 red onion peeled & diced
  • 1/2 cup fiesta blend shredded cheese
  • 1 ripe avocado peeled, pit removed, and diced
  • 6 slices bacon cooked crisp & crumbled
  • 1 - 1 1/2 cups cold, leftover smoked pulled pork

For The Dressing

  • 1 cup ranch dressing
  • 1/2 cup sweet & savory barbecue sauce

Instructions

  • Add all of the salad ingredients to a large mixing bowl. Toss until evenly combined.
  • In a separate mixing bowl, whisk together the ranch and barbecue until evenly combined.
  • Pour the barbecue ranch dressing over the salad mixture, then gently toss until evenly combined.
  • Serve immediately, and enjoy!

Notes

  • Don't like or have pulled pork? You could also use pulled barbecue chicken.
  • This salad is easy to customize. Not a fan of avocado? Don't use. Love corn? Add it in! You get the idea.
  • While I recommend a sweet and savory barbecue sauce like a brown sugar bourbon variety or honey barbecue, you could use a spicy one if you prefer. Whatever you like!
