Red White And Blue Cookie Cake

This red white and blue cookie cake is easy to whip up, and the perfect way to celebrate Summer. Change the frosting, candy, and sprinkle colors and you can easily adapt this cookie pie to suit any occasion!

Ingredients

  • 1/2 cup Butter softened
  • 1/2 cup Sugar
  • 1/2 cup Brown Sugar
  • 1 large Egg
  • 2 teaspoons Vanilla extract
  • 1 1/2 cups all purpose flour
  • 1/8 teaspoon salt
  • 2 teaspoons baking powder
  • 1/2 teaspoon Baking Soda
  • 1 cup Snowball M&M's or any kind of Blue M&M's - see link
  • 1/2 cup Red White and Blue Sprinkle Mix - of choice
  • 1 can Pillsbury Vanilla Frosting
  • Red Food Coloring Gel

Instructions

  • In a large bowl, mix together the Butter, Sugar, Brown Sugar, Egg, and Vanilla, until creamy and fluffy.
  • In a separate bowl, add the Flour, Salt, Baking Powder, and Baking Soda, and mix well. Add the Flour mixture to the Butter mixture a little at a time, stirring between additions, until all the flour has been incorporated and the mixture is like Cookie dough.
  • Add Sprinkles and M&M's to the bowl, and gently fold into the dough.
  • Grease and Flour the Cookie Pan, and press the Cookie Dough evenly into the pan, smoothing the top with the back of your spoon.
  • Bake at 350 for 20 minutes, then carefully remove to a wire rack to cool completely.
  • When cooled; add several drops of the Red Food Coloring Gel to the can of Frosting, until you get a bright Red color. Stir well to mix completely.
  • Place a large Star Tip in a Pastry bag, and place the Red Frosting in the Pastry bag. Pipe small Stars around the edge, and in the middle of the Cookie Cake.
  • Place an M&M in the center of the Frosting, and add more Sprinkles to the top of the Cookie Cake.
  • Serve, and ENJOY!

Notes

  • You can make this cookie pie ahead of time, but wait to decorate until just before serving- otherwise you run the risk of the colors on both the frosting and candies bleeding.
  • If you really need to shortcut this recipe, you can use store bought cookie dough but will have to adjust the bake time.
  • Change the colors of the frosting and the candies used to make this cookie cake fit any holiday theme or occasion!
