Easy creamy Greek pasta salad is a yummy take on the traditional dish full of light Mediterranean flavors. Penne gets tossed with a Greek yogurt dressing, cherry tomatoes, refreshing cucumbers, salty olives, and rotisserie chicken for a dish that is perfect as a side or a main course!

- 1 16 oz box penne pasta
- 1 1/2 cups Greek yogurt
- 2-3 tbsp minced garlic
- 1 1/2 tbsp dried dill weed
- 1 tbsp lemon juice
- salt & pepper to taste
- 1 1/2 cups cherry tomatoes halved
- 2 mini cucumbers thinly sliced
- 1/3 cup sliced black olives can sub kalamata olives
- 1 1/2 cups chopped rotisserie chicken
Cook the pasta according to the package directions in SALTED water, just until al dente.
Transfer the cooked pasta to a strainer and run under cold water, stirring, until it's completely cooled.
Add the yogurt, garlic, dill, lemon juice, salt, and pepper to a large mixing bowl. Whisk together until evenly combined.
Add the cooled pasta to the mixing bowl, and toss until it's evenly combined with the dressing.
Add the remaining ingredients to the bowl, tossing gently to combine.
Cover the bowl, and let the pasta chill for 2 hours.
Stir, then serve & enjoy!
- You can serve this pasta warm or cold.
- Add other mix ins if you want! Mix in options include: chopped zucchini, chopped pepperoni or salami, thawed frozen peas, crumbled feta cheese, or anything else your little heart desires.
- Want to keep this vegetarian? Skip the chicken and add a can of drained, rinsed chickpeas instead.
