Blackened Chicken Bites

Ingredients

  • 2 lbs boneless, skinless chicken breasts trimmed of fat, and chopped into roughly 1" pieces
  • 1 1/2 tbsp flour
  • 1 1/2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion power
  • 1 tsp chili powder
  • 1 tsp dried oregano
  • 1/2 tsp ground thyme
  • 1/2 tsp salt
  • 1/2 tsp freshly cracked black pepper
  • 1/4 tsp cayenne pepper optional
  • 2 tbsp extra virgin olive oil

Instructions

  • Add all of the seasonings to a small mixing bowl, then whisk them together until evenly combined.
    1 1/2 tbsp flour, 1 1/2 tsp smoked paprika, 1 tsp garlic powder, 1 tsp onion power, 1 tsp chili powder, 1 tsp dried oregano, 1/2 tsp ground thyme, 1/2 tsp salt, 1/2 tsp freshly cracked black pepper, 1/4 tsp cayenne pepper
  • Add the prepared chicken pieces to a large ziplocking bag, and pour in the spice mix. Seal the bag to close, then shake- turning the bag and moving the chicken pieces as necessary- until all are evenly coated in the spice mixture.
    2 lbs boneless, skinless chicken breasts
  • Add the oil to a large skillet set over medium high heat. Once hot (shimmery) add the seasoned chicken to the skillet, stirring to break apart and coating in the oil.
    2 tbsp extra virgin olive oil
  • Cook the chicken for 8-10 minutes, stirring every few minutes. Once the chicken's nicely browned and crisped on the outside, and cooked through, remove the skillet from heat.
  • Serve warm and enjoy!

Notes

  • Depending on the size of your skillet, you may want to cook the chicken in batches. Blackened recipes rely on a good sear, which means not overcrowding the pan.
  • Blackened chicken needs time to develop a crispy seared crust on all sides, so while you should stir the chicken only do so every few minutes.
  • Don't want the dish spicy? Omit the cayenne pepper.
