Three Ingredient Peanut Butter Cookies

Three ingredient peanut butter cookies are a peanut butter lover's dream come true! These soft cookies are beginner friendly, naturally gluten free, and absolutely delicious.

Ingredients

  • 2 cups creamy peanut butter
  • 2 large eggs
  • 2 cups granulated sugar

Instructions

  • Add all of the ingredients to a large mixing bowl. Using a hand mixer, beat together until evenly combined. Scrape down the sides, as needed, and repeat until a smooth batter has formed.

  • Shape the cookie dough into roughly 1 1/2" balls (golf ball sized), and place them on an ungreased cookie sheet about 2 inches apart. You may need to use more than one pan to allow for proper spacing.
  • Using the tines of a sturdy fork, press a crisscross pattern into the dough balls- flattening them some.
  • Bake, one pan at a time, at 350° for 12 minutes.
  • Remove the hot pan from the oven, and let the cookies cool completely. The cookies will harden as they cool.
  • Serve slightly warm and enjoy!

Notes

  • You may need to use more than one pan to allow for proper spacing.
  • Don't be alarmed if the cookies are super soft after baking, they will harden up properly as they cool.
  • Do not use natural peanut butter. The cookies won't set up properly.
