Chicken Stroganoff Over Noodles

Chicken stroganoff over noodles replaces beef in the classic dish with rotisserie chicken. This quick and easy recipe features tender chicken and earthy mushrooms in a rich, creamy sauce.

Ingredients

  • 4 cups chopped rotisserie chicken preferably big chunks
  • 8 oz sliced baby bella mushrooms
  • 1 10.75 oz can cream of mushroom soup
  • 1 10.75 oz can roasted garlic mushroom soup
  • 1 10.75 oz can beefy mushroom soup
  • 1 tbsp minced garlic
  • seasoned salt & pepper to taste
  • 16 oz sour cream
  • 1 tsp gravy master
  • 1/2 tsp smoked paprika
  • 1 lb wide egg noodles cooked according to package directions

Instructions

  • Add the chicken, mushrooms, soups, and garlic to a large skillet set over medium heat.
    4 cups chopped rotisserie chicken, 8 oz sliced baby bella mushrooms, 1 10.75 oz can cream of mushroom soup, 1 10.75 oz can roasted garlic mushroom soup, 1 10.75 oz can beefy mushroom soup, 1 tbsp minced garlic
  • Bring the mixture to a bubble, and let it simmer for 15 minutes- just until hot, stirring often.
  • Season with seasoned salt and black pepper, to taste. Be careful though since the mixture will be hot. Remove the dish from heat.

  • Stir in the remaining ingredients until evenly combined.
    16 oz sour cream, 1 tsp gravy master, 1/2 tsp smoked paprika
  • Serve over the cooked noodles, and enjoy!

Notes

  • Try to find all 3 of the different cream of soups for this recipe. However if you can only find classic cream of mushroom, add an extra teaspoon of garlic and a beef boullion cube.
  • If you have leftover roast or grilled chicken, you could use that instead of rotisserie.
  • Keep stirring once you make the sauce so nothing sticks or burns!
