Add the ground beef, onion, and garlic to a large skillet set over medium heat. Cook, crumbling as it does, until the beef's cooked through and no pink remains. Strain the beef to remove as much excess grease as possible, then return to the skillet.
1 1/2 lbs lean ground beef, 1 small white onion diced, 1 tbsp minced garlic
Add the taco seasoning, undrained tomatoes, broth, and chiles to the skillet. Stir together to evenly combine.
1 14 oz can diced tomatoes, 2 cups chicken broth, 1 packet taco seasoning, 2 oz drained diced green chiles
Add the spaghetti to the pot, and bring the mixture to a boil. Press on the spaghetti to push it down under the liquid then reduce the mixture to a simmer, cover, and simmer for 15 minutes- or until the spaghetti is done. Stir halfway through, press the spaghetti back into the liquid, and recover.
8 oz spaghetti pasta
Remove the lid, stir very well, and continue simmering for 1-2 minutes- just until the liquid's reduced. Remove the skillet from heat.
Sprinkle the cheese evenly out overtop of the cooked spaghetti, then cover the pot with the lid. Let the mixture rest for 5 minutes, or until the cheese has completely melted.
1 cup shredded cheddar cheese
