Bisquick Taco Casserole Bake

- 2 lbs ground beef
- 1 small white onion diced
- 2 packets mild taco seasoning
- 1 small can refried beans optional
- 4 large eggs
- 3/4 cups milk
- 1 1/4 cups bisquick baking mix
- 3/4 cup sour cream
- 2 cups shredded lettuce
- 1 1/2 cups shredded cheddar cheese
- 1 cup chopped roma tomatoes
- sliced black olives
In a large skillet, cook the ground beef & diced onion over medium heat. Break the meat up, crumbling it as it cooks, until it's all cooked through.
Strain off any grease, returning the beef to the skillet.
Add the taco seasoning, and prepare according to the directions on the packages. Stir in the refried beans until evenly incorporated and warmed through.
Spray a 9x13" casserole dish lightly with non stick cooking spray. Spread the meat mixture evenly out into the dish. Set aside.
Add the eggs & milk to a large mixing bowl, whisk them together until evenly combined. Add the bisquick and whisk again, just until combined. Pour the bisquick mix evenly out over the ground beef.
Bake the casserole at 400° for 20-25 minutes, or until the casserole's cooked through and golden brown on top.
Set the casserole aside and let it cool for 10 minutes, then spread the sour cream out overtop in an even layer.
Top with shredded lettuce, followed by the cheese, then tomatoes, and black olives.
Serve warm & enjoy!
- If you're unsure if the casserole is cooked through, insert a toothpick into the very center. If it comes out clean, it's done and if not let the casserole bake a couple minutes more.
- Let the casserole cool significantly (but not completely) before adding the sour cream, otherwise it will run.
- Like different toppings on your tacos? Feel free to add or substitute and enjoy this to your family's liking.
- Other topping ideas include sliced avocado, jalapenos, fresh pico de gallo or salsa.
