Spam Fried Rice

Spam fried rice is a classic take on the popular Pacific islands dish. This dish delivers tons of flavor quickly and easily in a budget friendly meal!

Ingredients

  • 2 1/2 tbsp soy sauce
  • 2 1/2 tbsp seasoned rice wine vinegar
  • 1 tbsp sugar
  • 4 tbsp canola oil divided
  • 4 eggs beaten
  • 1 12 oz can spam cut into small cubes
  • 3 tsp minced garlic
  • 6 cups cold steamed white rice
  • 1 green onion thinly sliced + more for garnish
  • sesame seeds for garnish

Instructions

  • Combine the soy sauce, vinegar, and sugar in a small bowl. Set aside.
    2 1/2 tbsp soy sauce, 2 1/2 tbsp seasoned rice wine vinegar, 1 tbsp sugar
  • Heat one tablespoon of oil in a large skillet over high heat. When hot stir in the eggs, and scramble just until 3/4's of the way done. Transfer them to a waiting plate, and set aside.
    4 tbsp canola oil, 4 eggs
  • Add the rest of the oil to the skillet, and add the spam. Cook, stirring often, until the spam has browned on all sides- roughly 4-5 minutes.

  • Stir in the garlic, and cook for 60 seconds. Then add the rice and sauce to the skillet, stirring together until evenly combined. Stir fry the mixture, stirring often, until no moisture's left in the skillet- roughly 2-3 minutes.
    3 tsp minced garlic, 6 cups cold steamed white rice
  • Add the eggs, stirring to combine and break apart.
  • Remove the skillet from heat and stir the sliced onion into the rice mixture.
    1 green onion
  • Serve warm with garnish, if desired.

Notes

  • DON'T overcook the eggs. Only cook them to the recommended 3/4's doneness. They won't be undercooked- residual heat will finish them while they sit.
  • You can sub store bought teriyaki sauce for the sauce ingredients.
  • Like things on the saucier side? You can add extra sauce to your liking, but taste the finished rice first.
