Instant Pot Funeral Potatoes

Instant Pot funeral potatoes are an easier version of the classic side dish. This cheesy, creamy, crunchy hash brown casserole will be a hit at any gathering you serve it at!

Ingredients

  • 1 cup chicken broth
  • 1 20 oz pkg refrigerated shredded hash browns
  • 1/4 cup yellow onion finely diced
  • 1 can cream of chicken soup
  • 3/4 cup sour cream
  • pinch crushed red pepper flakes
  • 1 tsp garlic powder
  • 1/8 tsp smoked paprika
  • salt & pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 - 1 1/2 cups cornflakes crushed, for topping
  • 2 tbsp melted butter for topping

Instructions

  • Make sure your liner is in the Instant Pot, then pour in the chicken broth & add a steamer basket to the pot.
  • Add the hash browns & onions to the basket. Close the lid, set the vent valve to the sealed position, and then set the Instant Pot to manual/pressure cook for 1 minute.
  • Carefully open the vent valve, avoiding the hot steam, and let the pressure quick release. Gently pour the steamed potato & onions into the bowl of the Instant Pot.
  • Add all of the remaining ingredients to the pot EXCEPT for the cornflakes and butter. Stir until evenly combined and the cheese has melted.
  • Transfer the cheesy potatoes to a small casserole dish. Set aside.
  • In a small mixing bowl, stir the crushed corn flakes & melted butter together until evenly combined. Spread this mixture evenly out overtop of the casserole mixture.
  • Using the BROIL setting, add the casserole dish to the oven and let the topping brown & crisp up until golden brown. Watch carefully to prevent burning, should take about 2 minutes.
  • Serve warm & enjoy!

Notes

  • You could sub actual fresh potatoes if you want, but the potatoes would need to be diced small and cook time increased in the instant pot to 3-4 minutes- depending on your pot.
  • Want to make this a heartier casserole? Stir in some chopped or diced ham (great for using up leftovers!), or served topped with crisp, crumbled bacon.
  • Don't like cheddar cheese or have any on hand? Use whatever fits your family's preference. We've used colby jack, Swiss, Monterrey jack, and white cheddar and have never had an issue.
