Creamy Chicken & Poppy Seed Pasta Salad
Creamy poppy seed pasta chicken salad with grapes turns the classic poppy seed chicken salad into a full meal or side dish. Featuring spiral pasta, sweet grapes, savory chicken, and crunchy almonds all tossed in a tangy, creamy poppy seed dressing, this will be an instant favorite at any picnic or potluck.

- 1 lb spiral pasta cooked according to 'al dente' pkg instructions- then drained and cooled
- 2 cups halved (lengthwise) red seedless grapes
- 2 cups chopped rotisserie chicken
- 3/4 cup sliced almonds
- 1 bunch green onions thinly sliced
For The Dressing
- 1 cup poppy seed salad dressing
- 3/4 cup mayonnaise
- 1 tbsp vinegar
- salt & pepper to taste
To a large mixing bowl add the cooked & cooled pasta, grapes, chicken, almonds, and green onions. Toss until evenly combined. Set aside.
To Make The Poppy Seed Dressing
In another smaller mixing bowl add all of the dressing ingredients. Whisk them together until smooth.
Pour the dressing over the pasta salad, and stir together until everything's evenly combined.
Serve immediately, or cover and chill for 1-2 hours- then serve.
- While I have only made this using white vinegar, I assume apple cider vinegar would work as well, just with a tangier result.
- Use a poppy seed dressing you enjoy, as this is one of the predominant flavors that will shine through.
- Omit the almonds if you are allergic.
