5 oz paper cups
wooden popsicle sticks
- 4 cups strawberry ice cream
- 3/4 cup strawberry jam
- 3/4 cup granola
Scoop the ice cream in a large mixing bowl. Let it rest for 5 minutes, just long enough for it to slightly soften. Don't let it melt!
Ad the jam to the mixing bowl, stirring just until incorporated but not 100% mixed in.
Spoon the ice cream mix evenly out into the paper cups, filling them close to full but not all the way.
Stick a wooden popsicle stick in the center of each ice cream filled cup.
Sprinkle the granola evenly out into each cup, around the popsicle sticks. Press in gently.
Transfer the ice cream cups to a flat tray, then to a freezer for 4 hours- or until firm.
Peel away the paper cups, discard, and enjoy the frozen strawberry pops!
- You can stir the granola into the ice cream mixture just before spooning it into the cups, but for crunchiest texture just add it to the tops of the cups.
- Press the granola down gently to ensure it sticks to the ice cream.
- You could substitute raspberry or blueberry or even peach for the jam and ice cream flavor if you and your kids prefer.
