Strawberry Cobbler Ice Cream Pops

Strawberry cobbler ice cream pops are an easy 3 ingredient treat to keep you cool all summer long. With creamy ice cream, ribbons of jam, and a touch of crunch, these homemade pops are as yummy as anything you can buy in the store.

Equipment

  • 5 oz paper cups
  • wooden popsicle sticks

Ingredients

  • 4 cups strawberry ice cream
  • 3/4 cup strawberry jam
  • 3/4 cup granola

Instructions

  • Scoop the ice cream in a large mixing bowl. Let it rest for 5 minutes, just long enough for it to slightly soften. Don't let it melt!
  • Ad the jam to the mixing bowl, stirring just until incorporated but not 100% mixed in.
  • Spoon the ice cream mix evenly out into the paper cups, filling them close to full but not all the way.
  • Stick a wooden popsicle stick in the center of each ice cream filled cup.
  • Sprinkle the granola evenly out into each cup, around the popsicle sticks. Press in gently.
  • Transfer the ice cream cups to a flat tray, then to a freezer for 4 hours- or until firm.
  • Peel away the paper cups, discard, and enjoy the frozen strawberry pops!

Notes

  • You can stir the granola into the ice cream mixture just before spooning it into the cups, but for crunchiest texture just add it to the tops of the cups.
  • Press the granola down gently to ensure it sticks to the ice cream.
  • You could substitute raspberry or blueberry or even peach for the jam and ice cream flavor if you and your kids prefer.
