Smoked Creamy Bacon Corn Dip

Smoked creamy corn dip with bacon is a delicious appetizer anytime. Featuring sweet corn, zesty jalapenos and chiles, and salty bacon in a creamy cheesy base, this dip will be an instant favorite!

Ingredients

  • 5-6 cups frozen corn thawed & drained
  • 2 large jalapenos seeded & diced
  • 1 can diced tomatoes & green chiles UNDRAINED
  • 4 slices bacon cooked crisp & crumbled
  • 1 cup shredded Mexican blend cheese
  • 4 8 oz blocks cream cheese
  • 1 tsp garlic powder
  • 1 1/2 tsp barbecue rub
  • 1/4 tsp smoked paprika

Instructions

  • Add all of the ingredients to a 9x13" disposable aluminum pan.
  • Smoke at 250°F for 1 hours.
  • Stir everything together to evenly combine.
  • Serve immediately with your favorite dipping options.

Notes

  • Don't have frozen corn? You can sub canned corn, just make sure it's well drained. The recipe will take roughly four cans.
  • There's no need to soften the cream cheese beforehand since you are just tossing it into the pan.
  • If you are vegetarian or cooking for a vegetarian, you can omit the bacon.
