- 16 oz ground chorizo sausage
- 16 oz block Monterey jack cheese shredded
- 1/2 cup thin restaurant style salsa
- 1/2 cup chopped fresh cilantro leaves
Cook the sausage in a skillet over medium heat, crumbling it as it cooks. Drain or strain off excess grease.
Transfer the cooked, drained, and crumbled chorizo to the bowl of your crockpot.
Add the remaining ingredients to the slow cooker.
Cover and cook on LOW for 3-4 hours, stirring every hour.
