The cost to make this soup is far less than the cost of ordering takeout to serve the same number of people.
But it still has those egg roll flavors we crave!
Ingredients
To make this you’ll need:
- Sausage– Ground sausage. I wouldn’t use a strongly seasoned or spicy variety in this for the most similar flavor to an egg roll.
- Onion– A small yellow onion, peeled and diced.
- Carrots– Buy a bag of matchstick carrots and dice them up.
- Coleslaw mix– The tricolor kind.
- Chicken broth– Low sodium is best since the soy sauce itself is pretty salty.
- Seasonings– Salt, pepper, garlic powder, ginger paste, soy sauce, and sesame oil.
- Garnish– Wonton strips, thinly sliced green onions, and sesame seeds.
How to Make
This pork egg roll soup is so easy to make!
To do it, cook the sausage, onion, and carrots together in a large Dutch oven or other heavy bottom soup pot over medium heat.
Crumble the sausage as it cooks.
Once the sausage is cooked through, strain off excess grease.
Stir in the coleslaw mix, garlic powder, salt, and pepper to the pot.
Cook it just until the cabbage has wilted.
Then stir the remaining ingredients into the pot.
Bring the soup to a simmer, and simmer uncovered for 10 minutes.
Ladle into bowls, garnish as desired, and serve warm!

Storing Leftovers
Store leftovers in an air tight container in the fridge for up to 4 days.
Reheat in the microwave or on the stove top until warmed through.

- To make it heartier, you could spoon in some cooked white rice or white rice noodles.
- Adjust the seasoning to fit your tastes.
- You can sneak in other veggies if you like- mushrooms, broccoli, or bok choy would all be yummy!

Instructions
