Add the sausage, onion, and carrots to a large Dutch oven, or other heavy bottom soup pot. Cook, over medium heat, and crumble until the sausage has cooked through. Strain off excess grease.
1 - 1 1/2 lbs ground sausage, 1 small yellow onion, 1 1/2 cups matchstick carrots
Add the cabbage, garlic, salt, and pepper to the pot. Stir them to evenly combine and cook just until the cabbage has wilted.
1 16 oz pkg tri color coleslaw mix, 1 1/2 tsp garlic powder, salt & pepper
Add the remaining ingredients to the pot, again stirring to combine.
6-8 cups chicken broth, 1 tbsp ginger paste, 2 tbsp soy sauce, 2 tsp sesame oil
Bring the soup to a simmer, and simmer uncovered for 10 minutes.
Ladle into bowls, garnish as desired, and serve warm!
