They are so much better than any of the store bought chips I have ever eaten.
And let me tell you friends, I have eaten my fair share of them so you could say I am something of an expert.

These homemade potato chips in the air fryer are the same restaurant style, extra crispy chips I love right at home but without all the extra oil.
So you know, better for you.
Ingredients
To make these you’ll need:
- Potatoes– Medium sized potatoes, washed well.
- Cooking spray– I like the olive oil spray for this but you could use pretty much any spray except the baking kind with flour in it.
- Salt– To season them
- Parsley– Optional as a garnish
How to Make Homemade Potato Chips in the Air Fryer
It’s not as hard as you might think to make homemade potato chips.
To start, slice the potatoes into very thin slices with a veggie peeler or mandolin.
Put the sliced potatoes in a large bowl and fill it with ice water to cover them.
Let the potatoes soak for 15 minutes.
After 15 minutes, drain the water and add fresh ice cubes and cold water.
Soak them for an additional 15 minutes.
Preheat the air fryer to 360 degrees and spray the basket with non-stick spray.
While the air fryer preheats, set up a sheet pan lined with paper towels.
Spread out the potato slices in an even layer and pat them dry with additional paper towels to soak up the excess water.
Spray the dried potato slices with the olive oil non-stick spray and sprinkle them with some salt.
Add a single layer of potatoes to the basket of the air fryer.
Cook for 5 minutes, and then stir.
Repeat this 2 more times for a total cook time of about 15 minutes.
The potato chips are done when they are browned slightly and crispy.
Put the cooked potato chips on a clean plate and repeat steps the process until all the potato slices are cooked.
Sprinkle with the parsley to garnish if desired.
Can I make homemade potato chips in the oven?
Yes, you can bake homemade potato chips.
To do it, prep the potatoes, slicing thinly and soaking them in cold water as directed above.
After patting them dry, again as directed above, lay the potato slices out into an even single layer on a baking sheet sprayed with nonstick spray.
Sprinkle them with salt.
Bake them at 425 for 10 minutes.
After 10 minutes, flip each chip over and bake for an additional 7 to 10 minutes or until the chips are brown and crispy.
Season them with fresh parsley if desired.
Storing
Before storing homemade potato chips, make sure you let them cool completely.
Once they have cooled to room temperature, you can store them in an airtight container on the counter.
If you have let them cook enough and cool completely before transferring them, they will keep up to a couple weeks on the counter.
What kind of potatoes should I use?
Starchy potatoes, not waxy potatoes, work best for potatoes.
Russet potatoes work really well.
Tips and Tricks
- You could toss the potato chips with other seasoning blends to make other varieties. Ranch seasoning, cheddar cheese and onion powder, or barbecue seasoning would all be yummy!
- If you plan to store the potato chips, you have to let them cool completely. Otherwise they will get soggy when you store them.
- Don’t skip soaking the potatoes in ice water. This helps the potatoes release some of their starch, making for crispier chips!
