  • ½ t salt
  • Parsley to garnish (optional)

Instructions

  • Using a veggie peeler or mandoline, slice the potatoes into very thin slices.
    3 medium potatoes
  • Place the potatoes in a large bowl and cover with ice and fill with cold water.
  • Allow the potatoes to soak for 15 minutes.
  • Drain the water and repeat with fresh ice cubes and water. Allow to soak for an additional 15 minutes.
  • Preheat the air fryer to 360 degrees. Spray the basket with non-stick spray.
    Olive oil cooking spray
  • Line a sheet pan with paper towels. Lay out an even layer of potato slices and pat with additional paper towels to soak up excess water.
  • Spray the potato slices with the olive oil non-stick spray. Sprinkle it with some salt.
    ½ t salt
  • Place a single layer of potatoes into the basket of the air fryer. Cook for 5 minutes at a time and stir. Potato chips are done after about 15 minutes, browned slightly and crispy.
  • Transfer the cooked potato chips to a clean plate and repeat steps 6-8 until all the potato slices are cooked.
  • Sprinkle with the parsley to garnish, optional.
    Parsley

Notes

  • You could toss the potato chips with other seasoning blends to make other varieties. Ranch seasoning, cheddar cheese and onion powder, or barbecue seasoning would all be yummy!
  • If you plan to store the potato chips, you have to let them cool completely. Otherwise they will get soggy when you store them.
  • Don't skip soaking the potatoes in ice water. This helps the potatoes release some of their starch, making for crispier chips!
  • These are delicious as is but so good with your favorite dips like 3 Ingredient Barbecue Dip or Dill Pickle Dip!
