Using a veggie peeler or mandoline, slice the potatoes into very thin slices.
3 medium potatoes
Place the potatoes in a large bowl and cover with ice and fill with cold water.
Allow the potatoes to soak for 15 minutes.
Drain the water and repeat with fresh ice cubes and water. Allow to soak for an additional 15 minutes.
Preheat the air fryer to 360 degrees. Spray the basket with non-stick spray.
Olive oil cooking spray
Line a sheet pan with paper towels. Lay out an even layer of potato slices and pat with additional paper towels to soak up excess water.
Spray the potato slices with the olive oil non-stick spray. Sprinkle it with some salt.

Place a single layer of potatoes into the basket of the air fryer. Cook for 5 minutes at a time and stir. Potato chips are done after about 15 minutes, browned slightly and crispy.
Transfer the cooked potato chips to a clean plate and repeat steps 6-8 until all the potato slices are cooked.
Sprinkle with the parsley to garnish, optional.
