Creamy avocado chicken is an Instant Pot chicken recipe you can throw together in about 20 minutes. Tender chicken gets topped with a zesty creamy avocado sauce for a dinner everyone’s sure to love!

It’s so easy to make a delicious dinner in almost no time at all.
And this creamy avocado dinner in the Instant Pot is a real winner for everyone.
Even for picky eaters that won’t touch anything but chicken.
The tender, seasoned Instant Pot chicken isn’t too much for kids who’d rather not expand their palates.
But the avocado sauce is a delicious addition for mom and dad who are tired of eating the same chicken day in and day out.
Plus, you only need 20 minutes and then dinner is done!
Ingredients
Let’s break this down into a set of ingredients for the chicken and another for the avocado sauce.
For the chicken, you’ll need:
- Chicken– Boneless, skinless chicken breasts diced.
- Butter and olive oil– To saute the chicken and garlic in
- Minced garlic– Fresh
- Onion powder
- Chicken broth– To pressure cook the chicken in
And for the avocado sauce you’ll need:
- Avocados– Large ripe avocados. Cut them in half, scoop out the pit and remove them from the peel.
- Shallot– Or a small sweet onion. Peeled and diced
- Cilantro– Fresh cilantro leaves, washed, dried and chopped.
- Poblano pepper– A small one seeded and diced.
- Sour cream– A heaping half cup so about a half cup plus a tablespoon or so
- Olive oil
- Lime juice– Fresh
- Seasonings– Seasoned salt, garlic powder, and oregano
How to Make
The Instant Pot makes it easy to put together this creamy avocado chicken!
To do it, put the liner in your Instant Pot and press the saute button.
Add the oil and butter to the pot and let the butter melt.
Once the butter is melted, saute the garlic for 60 seconds or just until it’s nice and fragrant.
As soon as the garlic is fragran add the chicken to the pot and sprinkle the onion powder out over top.
Saute the chicken in the garlic butter oil mixture for 3 minutes, stirring often.
Pour the broth into the pot and press the chicken down into the liquid as much as possible.
Secure the lid on the Instant Pot and make sure to set the vent valve to the ‘sealed’ position.
Press the ‘cancel’ button and then pressure cook on HIGH pressure for 4 minutes.
While the chicken’s cooking, prepare the avocado sauce by adding all of the avocado sauce ingredients to the bowl of a food processor fitted with the blade attachment.
Blend the sauce until smooth.
Set the sauce aside until the chicken is done.
When the Pot beeps, carefully open the vent valve to do a quick release.
Add all of the avocado sauce to the Instant Pot, stirring until evenly combined with the chicken and liquid in the pot.
Serve the chicken over steamed white rice with extra cilantro for garnish, if desired.

Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 3 days.
Reheat in the Instant Pot on saute mode until warmed through.
Tips and Tricks
- Have picky eaters? Pull out a few pieces of cooked chicken before adding the avocado cream sauce to the pot.
- While this is yummy with rice, it’s also delicious over pasta or even over salad greens.
- To cut the heat, omit the poblano pepper in the avocado sauce.
- Don’t skip the lime juice! It prevents the sauce from browning!

- 1 small poblano pepper seeded & diced
- heaping 1/2 cup sour cream
- 2 tsp extra virgin olive oil
- 1 lime juice of
- 1 1/2 tsp seasoned salt
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tsp dried oregano
Instructions
