Getting my guys to eat salad is a bit of a trick.
Some sad greens and dressing?
Hard pass for them.
But when you talk about adding all these ingredients with so much yummy crunch and filling protein, they will eat it.
And then you add some wonton strips and ginger dressing and they eat it happily!
So you can imagine that we make this Asian chopped salad quite a bit because it makes this mama happy when her kids eat their veggies!
Ingredients
To make this you’ll need:
- Mixed veggies– Prebagged blends that have chopped romaine, carrots, and cabbage are ideal!
- Almonds– Sliced
- Bell pepper– Red bell pepper seeded and diced
- Fresh herbs– A bunch of fresh cilantro, washed, stemmed and chopped and thinly sliced green onions.
- Chicken– Chopped rotisserie chicken is perfect!
- Wonton strips– You can find these in the Asian food aisle, near the salad dressings, or in the produce section.
- Honey ginger dressing– One bottle of your favorite brand.
How to Make
This Asian chopped salad is so easy and requires absolutely no actual cooking!
To make, just toss all the ingredients except for the dressing together in a large mixing bowl.
Then either pour the dressing over top and toss again or serve the dressing on the side and let everyone add their own.
Either way, serve and enjoy!
Storing Leftovers
If you plan to have leftovers of this salad, I recommend leaving the dressing and wonton strips off to add in on the side.
Then store leftovers in an airtight container for up to 2 days in the fridge.
Can I make Asian chopped salad ahead of time?
Yes!
Combine the salad ingredients in a large bowl, as instructed, except for the onions, wonton strips, and dressing.
Cover and refrigerate.
Just before serving add in the remaining ingredients, tossing to evenly combine.
Tips and Tricks
- Leftover chopped chicken thighs or grilled chicken breasts can be used in place of the rotisserie chicken.
- For a crunchier version, substitute an equal amount of chopped cabbage (or even bagged coleslaw mix) for the romaine lettuce.
- Feel free to leave out the almonds if you are allergic or just don’t like them.
