Baked Cheesy Fajita Chicken

Baked cheesy fajita chicken is a delicious way to turn basic fajitas into a cheese lover’s dream. This easy meal can be on your table from start to finish in under 45 minutes.

Taco night in our house is an event.

We have it weekly and we like to venture out beyond standard ground beef tacos.

And this baked cheesy fajita chicken is a really yummy upgrade to our regular taco night.

It’s almost easier than making a pan of taco meat since I don’t have to stand at the stove and babysit the meat.

Instead I just mix together a few ingredients and pop a pan of chicken into the oven.

And dinner is on the table super quick.

Ingredients

To make this you’ll need:

  • Boneless chicken breasts– Trimmed of fat
  • Cream cheese– Softened to room temperature
  • Fajita seasoning– 1 packet. You could also substitute a packet of your favorite taco seasoning.
  • Salsa– Your favorite chunky salsa
  • Bell peppers– Seeded and diced
  • Cheese– Shredded cheddar

How to Make

Baked cheesy fajita chicken is very easy to make.

Just set the chicken breasts in a 9×13″ baking dish sprayed with nonstick spray.

Set the baking dish of chicken aside while you whip together the cream cheese, salsa, and seasoning in a mixing bowl until it’s smooth.

Spread the cream cheese mixture out over the chicken.

Top the covered chicken with cheese.

Bake the chicken at 375 degree or until the chicken is cooked through and the cheese is melted and bubbly.

Serve and enjoy!

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

Reheat the chicken in a microwave or a hot oven until warmed through and the cheese is melted again.

Tips and Tricks

  • A sliced red onion would be a yummy addition to this dish.
  • Serve it with rice and beans or a side of tortillas for a cheesy fajita situation.
  • This won’t be spicy unless you are using hot salsa. Even then, the cream cheese will cut the heat down a bit.

Ingredients

  • 3-4 boneless, skinless chicken breasts trimmed of fat
  • 8 oz cream cheese softened
  • 1/3 cup chunky salsa
  • 1 1 oz pkt fajita seasoning
  • 2 bell peppers seeded & diced
  • 1-2 cups shredded cheddar cheese

Instructions

  • Lightly spray a 9x13" baking dish with nonstick cooking spray, then transfer the chicken breasts to the dish in an even row. Set aside.
    3-4 boneless, skinless chicken breasts
  • Add the cream cheese, salsa, and seasoning mix to a mixing bowl and whip together until smooth, creamy, and evenly combined.
    8 oz cream cheese, 1/3 cup chunky salsa, 1 1 oz pkt fajita seasoning
  • Spread the cream cheese mixture evenly out overtop of the chicken breasts. Then sprinkle the diced peppers and cheese evenly out overtop.
    2 bell peppers, 1-2 cups shredded cheddar cheese
  • Bake at 375° for 25-30 minutes, until the chicken is cooked through and the cheese is melted and bubbly.
  • Serve warm & enjoy!

Notes
