Barbecue ranch chopped salad is full of big textures and flavors. Tangy barbecue ranch dressing smothers smoked pulled pork on a bed of crisp greens tossed with crunchy chips, zesty onion, creamy avocado, and more of your favorite toppings.
We use our smoker a ton during the warmer weather and one of our favorite things is definitely smoked pork.
It makes a ton of pulled pork.
And while we love leftover pork as pulled pork sandwiches or as a topping on nachos, sometimes I just want a way to get some veggies into my system.
This chopped salad with barbecue ranch has not only me happily eating some veggies but also gets my picky sons and husband to eat- and dare I say enjoy- them too!
What does a chopped salad mean?
A chopped salad is very similar to a regular salad.
The main difference is in a chopped salad all the veggies are cut into small, uniform pieces and tossed together with the dressing.
This way in each bite you get a blend of all the flavors and not just a hunk of lettuce or a big glob of dressing.
Ingredients
To make this you’ll need:
- Greens– A mix of chopped mix greens and chopped romaine hearts
- Corn chips– Like Fritos
- Carrots– Chopped matchstick carrots
- Red onion– Peeled and diced
- Cheese– Shredded fiesta blend or shredded cheddar would work
- Avocado– Peeled, pitted, and diced
- Bacon– Cooked crisp and crumbled
- Pulled pork– Preferably smoked but you could use our crockpot pulled pork instead or even pick up a pack of refrigerated smoked pulled pork from Costco
- Dressing ingredients– Ranch dressing and a sweet and savory barbecue sauce
How to Make
Making barbecue ranch chopped salad is pretty easy!
After you chop all the ingredients into more or less equal sized bites, add all of the salad ingredients to a large mixing bowl.
Give everything a few gentle tosses to evenly combine the ingredients.
Then, whisk together the ranch and barbecue until evenly combined in a separate bowl.
Pour the barbecue ranch dressing over the salad mixture.
Gently toss the salad once more until the dressing evenly coats it.
Serve immediately, and enjoy!
Storing Leftovers
Unfortunately this chopped salad is best made fresh and served as soon as it’s tossed together.
Leftovers don’t store well as the lettuce will wilt and the chips get soggy.
Tips and Tricks
- Don’t like or have pulled pork? You could also use pulled barbecue chicken.
- This salad is easy to customize. Not a fan of avocado? Don’t use. Love corn? Add it in! You get the idea.
- While I recommend a sweet and savory barbecue sauce like a brown sugar bourbon variety or honey barbecue, you could use a spicy one if you prefer. Whatever you like!
