Not only is this meal stick to your ribs kind of food, but with a couple of shortcut ingredients it’s ready in well under 30 minutes.
So it’s perfect for the busiest nights and keeping everyone happy and full!
What is chicken stroganoff?
Chicken stroganoff is basically the same as beef stroganoff but with chicken instead of beef!
And my easy chicken stroganoff uses some shortcuts and timesavers like rotiserrie chicken and cream of soups to make the sauce so you can get dinner done!
Ingredients
To make this you’ll need:
- Chicken– Rotisserie chicken cut into big chunks.
- Mushrooms– An 8 ounce package of sliced baby bella mushrooms. If sliced button or white mushrooms are less expensive, feel free to substitute them!
- Cream of soups– A can of cream of mushroom, a can of roasted garlic mushroom, and a can of beefy mushroom soup.
- Minced garlic– Save yourself some time and grab a jar of minced garlic from the store.
- Spices– Seasoned salt, pepper, gravy master, and smoked paprika
- Sour cream
- Egg noodles– The wide kind, cooked according to the package directions
How to Make
This chicken stroganoff is one of the easiest meals you can make!
To do it, cook the chicken, mushrooms, soup, and garlic in a large skillet over medium heat.
Let it come to a simmer and keep simmering it for 15 minutes, stirring often.
At this point, season it with seasoned salt and black pepper and then remove the dish from the heat.
Stir in the remaining ingredients until everything is well combined.
Serve the creamy chicken stroganoff over the cooked noodles.

Storing Leftovers
If you know you will have leftovers, I recommend keeping the chicken and sauce separate from the noodles.
Doing this will help keep the noodles from absorbing all the liquid.
Store the chicken and sauce and the noodles in two separate airtight containers for up to 4 days in the fridge.
Reheat in the microwave until warmed through.
What can I substitute for sour cream in stroganoff?
Plain Greek yogurt works really well since it has a similar texture and tang.
You could also use cream cheese or heavy cream.
Tips and Tricks
- Try to find all 3 of the different cream of soups for this recipe. However if you can only find classic cream of mushroom, add an extra teaspoon of garlic and a beef boullion cube.
- If you have leftover roast or grilled chicken, you could use that instead of rotisserie.
- Keep stirring once you make the sauce so nothing sticks or burns!

- 1 lb wide egg noodles cooked according to package directions
Instructions

- Bring the mixture to a bubble, and let it simmer for 15 minutes- just until hot, stirring often.
- Season with seasoned salt and black pepper, to taste. Be careful though since the mixture will be hot. Remove the dish from heat.seasoned salt & pepper
- Stir in the remaining ingredients until evenly combined.16 oz sour cream, 1 tsp gravy master, 1/2 tsp smoked paprika
