Have you ever had the magical fried batter known as churros?
Light and fluffy on the inside and crunchy and coated in cinnamon sugar on the outside, these are a true treat.
Some people love them from their favorite Mexican restaurant, but I am firmly in the camp that Disney has the best churros.
Not that I’ll turn down churros from anywhere to be honest.
I just love the cinnamon sugar treat.
And these easy churro bars turn a box of yellow cake mix into a take on the delicious dessert.
Ingredients
To make these you’ll need:
- Cake mix– A 15.25 ounce box of your favorite yellow cake mix
- Oil– Preferably canola
- Eggs
- Cinnamon– Ground not sticks
- Sugar– Granulated
How to Make
These churro bars are so easy to make!
Just mix the cake mix, oil, eggs, and half the cinnamon together in a bowl until combined.
Use a spatula sprayed with non stick cooking spray to spread the batter out into an even layer in an 11×7 baking dish sprayed with nonstick cooking spray or lined with parchment paper.
Then mix the rest of the cinnamon and the sugar together in a mixing bowl and spread it out over the batter, pressing it into the batter with the back of a spoon.
Bake the churro bars at 350 for 15 to 17 minutes or until the edges puff up slightly.
Carefully remove the pan from the oven and let it cool for 5 minutes before slicing.
Serve and enjoy!
Storing
If you aren’t planning on serving these right away or if you have leftovers, let the bars cool completely.
Store in an airtight container on the counter for up to 4 days or in an airtight container in the fridge for up to a week.
Tips and Tricks
- The batter is very sticky. Because it is sticky, you must spray a spatula liberally with non stick spray before attempting to spread it out into an even layer.
- It’s not so much spreading the batter into an even layer but more like pressing it out and down into an even layer.
- You can serve these as is or with a drizzle of honey, caramel, or chocolate sauce.

Churro Bars (Cake Mix Recipe)
Ingredients
- 1 15.25 oz box yellow cake mix
- 1/3 cup canola oil
- 2 large eggs
- 1 tbsp ground cinnamon divided
- 1/4 cup granulated sugar
Instructions
- Add the cake mix, oil, eggs, and 1/2 the cinnamon to a mixing bowl and mix together until evenly combined.1 15.25 oz box yellow cake mix, 1/3 cup canola oil, 2 large eggs, 1 tbsp ground cinnamon
- Spray an 11x7" brownie pan with non stick cooking spray, or line it with parchment paper, then transfer the batter to it. Spray a spatula with non stick cooking spray, then use it to spread the batter out in an even layer.
- Add the sugar and remaining cinnamon to a small bowl, and stir together until evenly combined. Spread this mixture evenly out overtop of the batter, and gently press in with the back of a spoon to help it stick.1/4 cup granulated sugar
- Bake at 350° for 15-17 minutes, just until set and the edges have puffed up slightly.
- Carefully remove the hot pan from the oven and let cool for 5 minutes.
- Slice into 12 even bars, serve, and enjoy!
