Coconut Curry Soup With Wontons
Coconut curry soup with wontons turns a bag of mini frozen wontons into a cozy, comforting meal in just about 20 minutes. This sweet, savory, flavorful soup is sure to be one of your new favorite busy day dinners!

I love turning frozen, prepared foods into a totally unexpected meal.
Frozen pierogi, for example, make a filling addition to chicken stew.
In this case, frozen wontons make a hearty addition to a bowl of coconut curry soup.
This recipe brings bold flavor and cozy comfort together in one quick, satisfying meal.
The rich coconut broth, warm curry spice, and ready made wontons come together faster than ordering takeout!
You can have a steaming bowl on the table in minutes, making it perfect for busy nights or lazy weekends.
Plus it’s full of warming spices so it’s the perfect dish to keep you cozy on a chilly day.

Ingredients
To make this you’ll need:
- Canola oil– Or another light colored, mild oil
- Garlic– Pressed
- Ginger– Grated
- Curry paste– I used red curry paste but you can use green curry if you prefer a spicier flavor
- Coconut milk– The kind from a can not the kind you’d find in the refrigerated section to drink in place of cow milk.
- Chicken broth– You could use lower sodium chicken broth if you are worried about it being too salty.
- Fish sauce– Feel free to sub oyster sauce if that’s what you have.
- Sugar– Granulated
- Wontons– Roughly 1 pound or 48 frozen mini wontons
- Garnishes– Lime wedges and fresh cilantro leaves

How to Make
This coconut curry soup with wontons is so easy to make and can be on the table in just about 20 minutes!
To make it, saute the curry paste for 1-2 minutes in a large pot set over medium heat.
Then stir in the oil, ginger, and garlic and saute everything for another minute.
Stir the coconut milk and broth into the pot.
Bring everything to a simmer and then stir in the sugar and the fish sauce.
Cook the wontons according to the directions on the package.
Drain them and add some to your soup bowls.
Pour some of the hot soup over the wontons and garnish with lime wedges and fresh cilantro if desired.
Serve and enjoy!

Storing Leftovers
Store any leftover soup in an airtight container in the fridge for up to 3 days.
Be sure to store any leftover wontons in a separate airtight container in the fridge.
To reheat, microwave the wontons and soup until warmed through.
Spoon the soup over the wontons and enjoy!

Tips and Tricks
- Adjust the amount of garlic, ginger, and curry paste to suit your taste. If you want more spice, add more of each.
- A little sriracha drizzled on top would also be a yummy way to add some heat.
- Don’t add the wontons directly to the soup broth in the pot because they will suck up all the moisture and sort of fall apart.
