Creamy poppy seed chicken salad meets pasta salad.
It’s a dish your friends and family will rave about!
Ingredients
To make this you need:
- Pasta– The short spiral pasta cooked al dente and drained. Can’t find spirals? Use another short pasta like penne or bowties.
- Grapes– Red seedless grapes cut in half
- Chicken– Shortcut it with rotisserie chicken or leftover grilled or roast chicken.
- Almonds– Sliced or slivered almonds for crunch.
- Green onions– Thinly sliced,
- Dressing ingredients– Poppyseed dressing, mayo, white vinegar, salt, and pepper.
How to Make
This poppyseed pasta salad with chicken and grapes couldn’t be easier.
To make it, toss the cooked and cooled pasta, chicken, halved grapes, almonds, and sliced green onions together in a large bowl.
Set it aside while you make the dressing.
To make the dressing, add all of the dressing ingredients to a smaller mixing bowl and whisk them together until smooth.
Pour the dressing over the pasta salad and gently toss it all together until combined.
Serve immediately or cover it and chill for 1 to 2 hours prior to serving.
Enjoy!
Can I make this poppyseed pasta chicken salad ahead of time?
I recommend putting the salad itself together and the dressing together and then storing them separately until prior to serving.
When it’s time to serve the salad, pour the dressing on and toss the salad until it’s evenly coated.
Storing Leftovers
Store this pasta salad in an airtight container in the fridge for up to 5 days.
Keep in mind, the pasta will absorb more of the sauce the longer it sits.
Add extra mayo or poppy seed dressing to bring it back to a creamy consistency.
Tips and Tricks
- While I have only made this using white vinegar, I assume apple cider vinegar would work as well, just with a tangier result.
- Use a poppy seed dressing you enjoy, as this is one of the predominant flavors that will shine through.
- Omit the almonds if you are allergic.
