Firehouse mac and cheese is a filling macaroni hot dog casserole. This family friendly dish features cheesy, creamy pasta dotted with sliced hot dogs and topped with even more cheese. Everyone will love digging in!

Some casseroles are sort of high maintenance.

This fire department mac and cheese is not one of them!

And it’s super filling for even the biggest of appetites.

That’s probably why firefighters enjoy this mac and cheese with hot dogs so much!

I know my boys- who have appetites as big as any firefighter’s I’m sure- love this.

Ingredients

To make this you’ll need:

  • Pasta– Elbow macaroni is preferable but other short pastas like mini shells would also work.
  • Cheese– Velveeta, cubed cream cheese, and shredded cheddar
  • Butter– A whole stick cubed
  • Spices– Onion powder, garlic powder, Dijon mustard, salt, pepper, smoked paprika, and cayenne pepper
  • Beef hot dogs– Thinly sliced. You could also use thinly sliced sausage if you prefer.

How to Make

This firehouse mac and cheese is pretty easy to make!

To do it, put the noodles in a large oven safe dish.

Stir in the milk, and then spread out the pasta in an even layer, pressing it down so it’s submerged.

Put the block of Velveeta into the center of the dish.

Then spread out the cubed butter and cream cheese evenly through the pasta.

Sprinkle the seasonings and one cup of the cheddar cheese evenly out over the dish.

Bake at 375° for 25 minutes.

Carefully remove the hot dish from the oven and stir the sliced hot dogs into the noodle mixture.

Spread the mixture back out in an even layer, and bake another 20 minutes.

After 20 minutes, carefully remove the hot dish from the oven and sprinkle the remaining cheddar evenly out over top of the casserole.

Let the dish rest while the cheese melts.

Serve warm with sliced jalapenos and crisp crumbled bacon for garnish, if desired.

Storing Leftovers

Store leftovers in an airtight container in the fridge for up to 4 days.

Other Topping Ideas

This is really yummy with jalapenos and crispy bacon but you could also top it with:

  • either cooked or raw chopped onions
  • sour cream
  • hot sauce

Tips and Tricks

  • Don’t substitute the Velveeta for different cheese. It makes the casserole super creamy!
  • No need to cook the pasta first! It cooks in the milk in the oven.
  • If the pasta looks kind of dry before you add the hot dogs, stir in a bit more milk to keep it moist.

Ingredients

  • 4 cups elbow pasta
  • 16 oz velveeta cheese
  • 4 cups milk
  • 1 stick butter cubed
  • 8 oz cream cheese cubed
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tbsp Dijon mustard
  • 1 tsp pepper
  • 1 tsp salt
  • 1/8 tsp smoked paprika
  • 1/8 tsp cayenne pepper
  • 2 1/2 cups shredded cheddar cheese divided
  • 4-5 beef hot dogs thinly sliced

Instructions

  • Add the noodles to a large oven safe dish, like a Dutch oven. Pour in the milk, stir, then spread out the pasta in an even layer- pressing it down so it's submerged in the milk.

  • Add the block of velveeta to the center of the dish. Add the cubed butter and cream cheese, spreading them evenly out among the pasta.
    16 oz velveeta cheese, 1 stick butter, 8 oz cream cheese
  • Sprinkle the seasonings and one cup of the cheddar cheese evenly out over the dish.
    1 tsp onion powder, 1 tsp garlic powder, 1 tbsp Dijon mustard, 1 tsp pepper, 1 tsp salt, 1/8 tsp smoked paprika, 1/8 tsp cayenne pepper
  • Bake at 375° for 25 minutes.
  • Carefully remove the hot dish from the oven. Add the hot dogs to the dish, and extra milk if needed, stirring to evenly combine. Spread the mixture back out in an even layer, and bake another 20 minutes.

  • Carefully remove the hot dish from the oven, and sprinkle the remaining 1 1/2 cups of cheddar evenly out over top. Let the dish rest while the cheese melts.
  • Serve warm with sliced jalapenos & crisp crumbled bacon for garnish, if desired.
