Greek Rice Salad
Greek rice salad turns your leftover rice into a refreshing side dish or light lunch! Rice gets tossed with sliced cucumbers, red onion, cherry tomatoes, black olives, feta and a light vinaigrette. Perfect for hot days!
If there’s one thing that grinds my gears it’s having leftovers.

And this light, fresh Greek rice salad is the perfect way to use up leftover rice.
Leftover rice is one of those things I almost always have because I’m never sure how much my family will eat.
Will they each eat a whole cup or just a grain?
It’s a fun guessing game that I always get wrong.
Fortunately this Greek rice salad puts all that rice to good use with the addition of fresh Mediterranean flavors and a light vinaigrette dressing.
Ingredients
To make this you’ll need:
- Rice– Leftover, cooked white rice. You could also use brown rice or even leftover quinoa or couscous.
- Cucumber– A small, thinly sliced cucumber
- Red onion– Half of one, peeled and diced.
- Cherry tomatoes– Halved
- Black olives– A drained can of sliced black olives.
- Feta– Crumbled
- Olive oil– Extra virgin
- Vinegar– White vinegar but you could substitute red wine vinegar
- Spices– Garlic powder, salt, and pepper
How to Make
This Greek rice salad couldn’t be easier!
Just toss all of the ingredients together in a large bowl until they are combined.
Serve or chill and then serve.
Enjoy!
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days or so.
The rice may absorb some of the liquid so you may have to add a bit more olive oil to liven it up again.
Tips and Tricks
- This is delicious as is, but you could add grilled shrimp or rotisserie chicken or even a can of drained chickpeas to add more protein and make a complete meal.
- Really make this shine by adding some fresh basil or parsley to the salad.
- Skip any of the ingredients you don’t like.
- While you can enjoy it right away, this is one of those dishes that gets better if it has a chance to sit prior to serving it so the flavors can come together.

- 1 3 oz can sliced black olives drained
