Honey mustard chicken salad is a sweet and savory upgrade to the standard sandwich filling. Tender chicken gets mixed with creamy mayo, tangy Dijon, honey, and crunchy onions and pecans to make a lunch you’ll love all week long!

Chicken salad is a go to lunch around here.

My husband loves it.

The kids love it.

And heck, I love it too, and not only because it’s delicious but because it’s easy and filling.

The filling part is key because this mama doesn’t want to hear, “Mom, I need a snack!” every few minutes.

And this hearty sandwich filling sure helps with preventing that!

Ingredients

To make this you’ll need:

  • Chicken– Chopped rotisserie chicken. You could also use any chopped leftover grilled chicken or roast chicken too.
  • Mayonnaise– Real, full fat mayo and not mayonnaise style dressing.
  • Mustard– Dijon
  • Honey
  • Onion– Diced red onion. You can skip this if onion is not your thing.
  • Pecans– Chopped. These are also optional or you can substitute them for chopped walnuts.
  • Salt and pepper– To taste

How to Make

Honey mustard chicken salad is so easy to make!

Just whisk the mayo, Dijon, and honey together in a small bowl until they are evenly combined.

In a second, larger bowl, toss the chopped chicken with the diced onions and chopped pecans to combine.

Pour the dressing over the chicken and stir everything together so the chicken is coated.

Season it with salt and pepper to taste.

Serve and enjoy!

Storing

Store this in an airtight container in the fridge for up to 4 days after you bought the rotisserie chicken.

  • You can adjust the amounts of the Dijon and honey to suit your tastes. Use more Dijon for a tangier chicken salad or more honey for a sweeter outcome.
  • The onions and chopped pecans are what I’d mix in, but you could also add in diced celery.
  • You can serve this right away but it is one of those recipes that tastes better if you let it marinate for a little while.

Ingredients

  • 5 cups chopped rotisserie chicken
  • 1/3 cup mayonnaise
  • 1/3 cup Dijon mustard
  • 1/3 cup honey
  • 1/3 cup diced red onion
  • 1/3 cup chopped pecans
  • salt and pepper to taste

Instructions

  • Add the mayonnaise, mustard, and honey to a small bowl. Whisk together until evenly combined.
    1/3 cup mayonnaise, 1/3 cup Dijon mustard, 1/3 cup honey
  • Add the prepared chicken to a mixing bowl, along with the onion and pecans. Gently toss to combine.
    5 cups chopped rotisserie chicken, 1/3 cup diced red onion, 1/3 cup chopped pecans
  • Pour the dressing overtop of the chicken mixture, then gently stir until everything's evenly combined. Season with salt & pepper, to taste.
