Instant Pot apple pie filling is the quickest, no fuss way to make the delicious fall treat. While you can use the end result in pie, it’s also delicious with ice cream or spooned out over pancakes or waffles.
I love a good old fashioned apple pie.
But I don’t love using canned pie filling in pies or standing over the stove to make homemade filling.
It’s a pain and takes way longer than I care to spend.
But with the Instant Pot, you just throw everything into the pot and, boom, you are on your way to fall flavored deliciousness.
Ingredients
To make this you’ll need:
- Apples– Peeled and cut into bigger diced pieces.
- Lemon juice– Fresh or bottled.
- Sugar– Both brown and granulated for best flavor.
- Spices– Cinnamon and salt
- Water
- Cornstarch– To thicken the filling.
How to Make
This apple pie filling is so easy to make and comes out so tasty.
To do it, make sure the liner is in your Instant Pot then add the prepared apples to the bowl.
Toss the apples with the lemon juice right in the pot liner.
In a medium mixing bowl whisk together the sugars, cinnamon, salt, and water until everything is evenly combined.
Then, pour this mixture over the apples and toss to combine.
Secure the lid on the pot, making sure the valve is set to sealing.
Pressure cook for 1 minute at normal pressure.
When the pot beeps, let the mixture naturally release for 4 minutes.
After 4 minutes, carefully open the vent valve to quick release the rest of the steam.
Open the lid and remove 1/4 cup of the juices.
Whisk the juices and cornstarch together until the mixture is smooth.
Then, pour the cornstarch mixture back into the pot and stir gently just until it thickens.
Use right away in a pie or store for later.

Storing
You can store this in an air tight container in the fridge for up to 5 days.
If you want to freeze it, transfer it to a freezer safe container or bag and freeze it for up to 3 months.
Is it better to cook apple pie filling first?
Yes!
Cooking the filling first will give you the perfect consistency.
It also helps make sure there is no space between the crust and filling.
What apples should I use?
Go for any firm apple you like, but I always recommend Granny Smiths for apple pie.
They are nice and firm so they will keep their shape better in pie.
Plus, their tartness balances all the sweetness.
If you use a softer apple, like Red Delicious, the apples will fall apart.
Why isn’t my pie filling thickening?
You need to stir the filling gently after you add the cornstarch mixture.
The cornstarch will thicken it.
If it isn’t thickening, you have likely forgotten to add the starch.
Also, remember, the filling will thicken as it cools!
Tips and tricks
- Do not finely dice or chop the apples too small! You will still end up with delicious apple pie filling, but it won’t have any chunks of apples in it and be more like a sauce.
- If you prefer larger chunks, slice or just roughly chop your apples.
- This recipe makes about 2 pints worth of apple pie filling.

Instant Pie Apple Pie Filling
Ingredients
- 8 large apples peeled & diced (roughly 6-8 cups)
- 1 tbsp lemon juice
- 3/4 cup packed brown sugar
- 1/4 cup granulated sugar
- 1 tsp ground cinnamon
- 1/4 tsp salt
- 1 3/4 cups water
- 1/4 cup cornstarch
Instructions
- Make sure the liner is in your Instant Pot, then add the prepped apples to the bowl. Add the lemon juice and toss to coat.
- In a medium mixing bowl whisk together the sugars, cinnamon, salt, and water until evenly combined. Pour this mixture over the apples and toss to combine.
- Add the lid to the pot, turning to close. Set the vent valve to the sealed position.
- Pressure cook for 1 minute at normal (medium) pressure. Let the mixture naturally release for 4 minutes, then carefully open the vent valve to release the rest of the pent up steam.
- Open the lid, and remove 1/4 cup of the juices (it's ok if an apple or two is in there). Add the juices and cornstarch to a small mixing bowl and whisk together until smooth.
- Pour the cornstarch mixture back into the pot, and stir just until thickened- trying not to break the apples up too much as you do.
