Instant Pot funeral potatoes are an easier version of the classic side dish. This cheesy, creamy, crunchy hash brown casserole will be a hit at any gathering you serve it at!

Not only are these kinds of casseroles super yummy, but the combination of cheese and carbs makes for the ultimate in comfort food.
And this version of funeral potatoes keeps all the classic flavors and textures, but cuts the cook time down thanks to the Instant Pot.
What are funeral potatoes?
Funeral potatoes are a very popular side dish in the Midwest, South, and intermountain West.
The dish is a crowd pleasing casserole featuring hash browns or diced potatoes baked in a creamy, cheesy sauce.
Why are they called funeral potatoes?
Their unique name actually comes from where they are often served.
This comfort food side dish often appears at after funeral luncheons. It’s as traditional as ham biscuits.
They are particularly popular at after funeral gatherings in the culture of the Church of Jesus Christ of Latter-Day Saints.
Why make funeral potatoes in the Instant Pot?
The Instant Pot drastically cuts the cook time of this down.
Traditional funeral potato recipes need to be baked for 45 minutes to an hour and then broiled.
This version needs to cook for only 1 minute before you get it ready to toss under the broiler.
Added bonus? It uses fewer dishes too so there’s not much to clean up!
Ingredients
To make these you’ll need:
- Chicken broth– You could use vegetable broth if you prefer.
- Hash browns– Buy a package of refrigerated shredded hash browns and save yourself the trouble of making your own.
- Onion– Yellow onion, finely diced.
- Cream of chicken soup– Don’t have this on hand? Sub cream of whatever you have instead.
- Sour cream– You could substitute plain Greek yogurt, cottage cheese, or whipped cream cheese if needed.
- Spices– Crushed red pepper flakes, garlic powder, smoked paprika and salt and pepper to taste
- Cheddar cheese– Shredded
- Cornflakes– Crush them up so you can use it as a topping. You could substitute panko bread crumbs or crushed Ritz crackers instead.
- Butter– melted
How to Make
This potato casserole is very easy to make thanks to the Instant Pot.
To do it, make sure your liner is in the Instant Pot, then pour in the chicken broth and add a steamer basket to the pot.
Then, add the hash browns and onions to the basket.
Secure the lid on the Instant Pot and make sure the vent valve is in the sealed position.
Set the Instant Pot to manual pressure cook for 1 minute.
After the Pot beeps, do a quick release by carefully opening the vent valve, avoiding the hot steam.
Remove the steamer basket and then pour the steamed potato and onions into the bowl of the Instant Pot.
Add all of the remaining ingredients to the pot except for the cornflakes and butter.
Stir until evenly combined and the cheese has melted.
Transfer the cheesy potatoes to a small casserole dish and set it aside while you prepare the topping.
In a small mixing bowl, stir the crushed corn flakes and melted butter together until evenly combined.
Then, spread this mixture evenly out overtop of the casserole mixture.
Add the casserole dish to the oven, set to broil, and let the topping brown until golden brown.
Watch carefully to prevent burning, should take about 2 minutes.
Serve warm and enjoy!
Can I make this ahead of time?
Yes! You can make this ahead of time, BUT do not top and bake until just before serving.
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 3 days.

- You could sub actual fresh potatoes if you want, but the potatoes would need to be diced small and cook time increased in the instant pot to 3-4 minutes- depending on your pot.
- Want to make this a heartier casserole? Stir in some chopped or diced ham (great for using up leftovers!), or served topped with crisp, crumbled bacon.
- Don’t like cheddar cheese or have any on hand? Use whatever fits your family’s preference. We’ve used colby jack, Swiss, Monterrey jack, and white cheddar and have never had an issue.

Instant Pot Funeral Potatoes
Ingredients
- 1 cup chicken broth
- 1 20 oz pkg refrigerated shredded hash browns
- 1/4 cup yellow onion finely diced
- 1 can cream of chicken soup
- 3/4 cup sour cream
- pinch crushed red pepper flakes
- 1 tsp garlic powder
- 1/8 tsp smoked paprika
- salt & pepper to taste
- 2 cups shredded cheddar cheese
- 1 - 1 1/2 cups cornflakes crushed, for topping
- 2 tbsp melted butter for topping
Instructions
- Make sure your liner is in the Instant Pot, then pour in the chicken broth & add a steamer basket to the pot.
- Add the hash browns & onions to the basket. Close the lid, set the vent valve to the sealed position, and then set the Instant Pot to manual/pressure cook for 1 minute.
- Carefully open the vent valve, avoiding the hot steam, and let the pressure quick release. Gently pour the steamed potato & onions into the bowl of the Instant Pot.
- Add all of the remaining ingredients to the pot EXCEPT for the cornflakes and butter. Stir until evenly combined and the cheese has melted.
- Transfer the cheesy potatoes to a small casserole dish. Set aside.
- In a small mixing bowl, stir the crushed corn flakes & melted butter together until evenly combined. Spread this mixture evenly out overtop of the casserole mixture.
- Using the BROIL setting, add the casserole dish to the oven and let the topping brown & crisp up until golden brown. Watch carefully to prevent burning, should take about 2 minutes.
- Serve warm & enjoy!
