Instant Pot kielbasa and creamy potatoes is the quickest dinner solution for big appetites. This easy comforting meal comes together in under 20 minutes and can feed a crowd.
The worst part about adulting is definitely the fact that you need to get dinner on the table every single day.
What nonsense is that?
Always having to decide what to make and then actually make it after a busy day of work or parenting or whatever.
Zero stars. Do not recommend.
Unless you are making something super quick and easy like this Instant Pot kielbasa and potato meal.
It’s super quick and feeds all 5 of my boys and keeps them full for awhile.
Ingredients
To make this you’ll need:
- Kielbasa– Slice it into coins. If you can’t find kielbasa, any Polish sausage would work. So would andouille.
- Potatoes– Go for petite yellow potatoes and cut them in half.
- Onion– Dice a small white onion.
- Olive oil– You could use another light oil if needed.
- Seasoning– Minced fresh garlic, dried thyme, seasoned salt, and cracked black pepper.
- Chicken broth– You could use water but it won’t be as flavorful.
- Milk– Go for a higher fat.
- Cornstarch– To thicken the sauce.
- Half and Half- To finish the sauce and make it creamy. Want it creamier? Sub heavy cream or stir in half and half.
How to Make
This dinner is so quick and easy thanks to the Instant Pot.
To make it, set the Instant Pot to saute mode and when the display says HOT, add the oil.
Add the sausage, onion, and seasonings to the pot and saute for about 2 minutes, stirring often.
After the sausage has begun to brown and the onions have softened, press the cancel button to turn off the pot.
Next, add the broth and potatoes to the Instant Pot before securing the lid on the pot.
Turn the vent valve to the sealed position, then press the manual cook button and set the time for 2 minutes.
When the Pot beeps, open the vent valve to do a quick pressure release.
Once the pressure has released, remove the lid.
In a small bowl, whisk the milk and cornstarch together until evenly combined.
Pour it into the pot, and press the saute button again.
Cook, stirring, for roughly 2 minutes to allow the sauce to thicken.
Then finish it by stirring in the half and half until fully incorporated.
Serve and enjoy!
Storing Leftovers
Store leftovers in an airtight container in the fridge for up to 4 days.
Reheat in the microwave until warm.
What size Instant Pot do I need?
I make this in my 6 quart Instant Pot, but you could use an 8 or 10 quart pot.
If you use a bigger Pot, you have the option to double the recipe.
Just keep the cook time the same.
How Long Does The Instant Pot Take To Come To Pressure?
If you’re busy like me, planning out the total time it takes to make a meal is important.
While this recipe takes less than 20 minutes of combined prep & cook time, it is important to note that it takes time for the pot to come to pressure before the actual cooking begins.
Depending on the size and model of your pot, it will take about 10 minutes to come to pressure.
Keeping that in mind, this dinner will take about 30 minutes from start to finish. Still a quick, easy under 30 minute meal all in all!
Tips and Tricks
- Be very carefully when you release the pressure so you don’t get scalded by the steam.
- Want to garnish this? Serve it topped with chopped fresh parsley leaves and a bit of shredded Parmesan cheese.
- Find the sauce is too thick? Thin it with a little extra chicken broth.
- If you’re looking to make this a full meal made in a single pot, you can stir in a can of (drained) green beans just before serving. The residual heat will warm them up perfectly. Alternatively, you can add a bag of baby carrots with the potatoes.

Instant Pot Kielbasa & Creamy Potatoes
Ingredients
- 1 14 oz kilebasa sauce sliced into thin coins

- 1 tbsp extra virgin olive oil
- 1 1/2 tbsp minced garlic
- 1/4 tsp dried thyme leaves

- 1/8 tsp freshly cracked black pepper
- 1 cup chicken broth
- 1/2 cup milk
- 2 tbsp cornstarch
- 1/4 - 1/3 cup half & half
Instructions
- Press the saute button on your Instant Pot, and when it reads HOT add the oil.
- Add the sausage, onion, and seasonings to the pot and saute, stirring often, just until the sausage has begun to brown and the onions have softened- about 2 minutes. Press the cancel button to turn off the pot.
- Add the broth and potatoes to the Instant Pot, then the lid- turning to close. Turn the vent valve to the sealed position, then press the manual/pressure cook button and set the time for 2 minutes.
- When the timer beeps to let you know it's done cooking, CAREFULLY open the vent valve to let all the steam out in a quick release.
- In a small bowl, whisk the milk and cornstarch together until evenly combined. Pour it into the pot, and press the saute button again.
- Cook, stirring, for roughly 2 minutes to allow the sauce to thicken. Stir in the half & half until fully incorporated.
- Serve & enjoy!
