These Italian style chopped deli sandwiches remedy that problem and are a take on the viral TikTok chopped sub sandwiches.
You chop all the ingredients up so you get the perfect bite each time.
The result is Italian grinder perfection!
Ingredients
To make this you’ll need:
- Deli meat– Thinly sliced salami, thinly sliced ham, and pepperoni
- Cheese– Provolone
- Veggies– Shredded lettuce, thinly sliced red onion, sliced tomato, and sliced pepperoncini
- Mayonnaise– Real mayo not Miracle Whip or mayonnaise style dressing
- Red wine vinegar
- Italian dressing
- Seasoning– Dried oregano, salt and pepper
How to Make
Making these chopped grinders is pretty easy!
Just spread the lettuce out in an even layer on a large wooden cutting board.
Then layer on the veggies evenly followed by the meats and cheese.
Add the mayo, vinegar, dressing, and seasonings directly on top of the meat.
Using a sharp knife finely chop all of the ingredients until they’re all bite sized pieces, mixing them together as you chop.
Divide the filling into 3-4 sections and shape them so they are roughly the same length as your hoagie buns.
Lay the open buns on top of them.
Slide your knife flat under the filling and using the knife to hold it in place and press it into the bun, flip the hoagie over with the filling inside.
Serve and enjoy!
How many sandwiches does this make?
This recipe makes 3-4 big subs, depending on how full you stuff the rolls.
It is enough, as written, to feed my family of 6, 5 of whom are very hungry boys.
Storing Leftovers
Like most subs, I don’t recommend keeping leftovers.
This filling is juicy, and if stored for more than a few hours the buns will begin to get soggy and the lettuce will wilt.
Can I make chopped Italian sandwiches ahead of time?
You can make these sandwiches in the morning if you are taking them for lunch.
Just wrap them in parchment paper and refrigerate until ready to eat.
When you are ready to enjoy, cut the sub in half straight through the parchment paper.
The wrapper will hold in the juices so it’s less messy to eat.
Tips and Tricks
- You can use different lunch meats to suit your tastes. Bologna, roast beef, and capicola ham are also really good in these chopped Italian sandwiches.
- Likewise, you can switch up the cheeses. Sliced mozzarella and shredded Parmesan would both be delicious additions (or substitutions).
- Love other toppings on your sub sandwiches? Add them to the mix! Just make sure everything is chopped to the same finely diced consistency so that all the flavors are evenly incorporated into each bite.

Italian Style Chopped Deli Sandwiches
Ingredients
- 3-4 large hoagie rolls

- 6 slices provolone cheese
- 8 oz shredded lettuce
- 1 small red onion peeled & thinly sliced
- 3-4 slices tomatoes
- 1/4 cup sliced pepperoncini
- 3/4 cup mayonnaise
- 1/2 tbsp red wine vinegar
- 1 tbsp Italian dressing
- 1/2 tsp dried oregano
- salt & pepper to taste
Instructions
- Spread the lettuce out in an even layer on a large wooden cutting board.
- Next, add the veggies in an even layer- onion slices, pepperoncini, and then sliced tomatoes. Layer the meats on next, followed by the cheese.
- Add the mayo, vinegar, dressing, and seasonings directly on top of the meat.
- Using a sharp knife finely chop all of the ingredients, mixing them together as you continue to chop. Chop until they're all bite sized pieces of similar size and the mixture's creamy and evenly incorporated.
- Divide the filling into 3-4 'logs' that're roughly the same length as your hoagie buns, and lay the open buns on top of them. Slide your knife flat under the filling and using the knife to hold it in place and press it into the bun, flip the hoagie over with the filling inside.
- Serve and enjoy!
