I love McDonald’s breakfasts.

Of course I rarely get them between my general dislike of mornings and how busy they are.

Plus, they are pretty pricey for what they are.

But with these TikTok McGriddles bites, I can enjoy all the flavors of the classic breakfast sandwich at home.

And these little muffins are the perfect make ahead morning meal so all you have to do in the morning is heat one up and head out the door.

Ingredients

To make these you’ll need:

  • Pancake mix– Make sure you are using the kind that only needs water.
  • Water
  • Cheese– Shredded cheddar
  • Maple syrup
  • Sausage– Your favorite ground breakfast sausage.

How to Make

McGriddle bites are pretty easy to make!

Just brown the sausage in a skillet over medium heat, crumbling as it cooks, until it’s cooked through.

Strain the excess grease from the cooked sausage and set the sausage aside while you make the batter.

To make the batter, mix the pancake mix, water, cheese, and syrup together in a large mixing bowl until it’s evenly combined.

Then fold in the sausage.

Spoon the batter evenly out into nonstick mini muffin tin wells.

Bake at 400° for 12-15 minutes or until the bites are cooked through and golden brown.

Serve warm with syrup for dipping, if desired.

Enjoy!

Storing Leftovers

Store completely cooled muffins in an airtight container in the fridge for up to 5 days.

Just pop them in the microwave until warm and you’re good to go!

Can I freeze these?

Yes!

McGriddle bites are very freezer friendly!

Just let them cool completely and then transfer the muffins to a freezer safe bag or container and freeze for up to 3 months.

Pop one or two in the microwave to thaw and warm through.

Tips and Tricks

  • If you’re worried about the muffins sticking, spray the wells of the mini muffin tin pan with nonstick spray before adding the pancake batter.
  • You can use different cheese or spicy sausage for variations.
  • Real maple syrup tastes best but the fake stuff will work for this too.

This has quickly become a favorite in our house. In fact, we are making a quadruple batch to take to Friendsgiving tomorrow morning for a quick pop in the mouth breakfast while we all work together to make the dinner feast.
